Here is a simple yet fave recipe of my family:
Ingredients:
Fresh ripe tomatoes
Fresh cilantro
Fresh Onion
Plain Tomato sauce (1 regular size can for ever 3-4 large tomatoes)
Fresh Jalapeno Pepper
Fresh Lemon
Chop fresh tomatoes
Chop cilantro
Chop Onion
Mix in bowl
Add the tomato sauce and mix
Add fresh squeezed lemon juice to taste
Mince the jalapeno pepper(s). Add according to the amount of heat you want. The seeds have the most heat. Leave those out altogether if you want a milder salsa.
Members of my family like different levels of heat so I just save the pepper for last. Place the mixture and different bowls and then add the pepper for last. Warning: do not handle the minced pepper with bare hands.
Hint: you can leave out the tomato sauce, add fresh ripe avocado (sour cream, too if you wish) and you will have a nice guacamole recipe as well.

I like to take 2-3 tomatoes and chop them into small dices. Add 1/2 an onion chopped also and 1 green pepper, Then add 1 tsp of sugar ( to balance out the acid) add 1-3 jalapenos for heat, the seeds and membranes are what makes it hot. Do NOT get the pepper in your eyes. Add cilantro if you like as that adds flavor, salt and pepper and you're good to go. Also in most grocery stores in the spice aisle, you can buy a salsa kit where you just add your vegetables and they provide all th seasonings.

Sweet-and-Hot Onion Salsa:
For a tropical twist, try ripe mango in place of the red plum. Serve this salsa with baked tortilla chips, grilled chicken, fish, or pork.
1 cup chopped Vidalia or other sweet onion
1/4 cup orange juice
2 tablespoons water
1 teaspoon sugar
1 1/4 cups diced red plum
1 cup diced Granny Smith apple
1 tablespoon chopped seeded jalapeño pepper
1 tablespoon white wine vinegar
2 teaspoons lime juice
1/8 teaspoon salt
1/8 teaspoon black pepper
1 garlic clove, minced
Combine the first 4 ingredients in a small saucepan. Bring to a boil; cover, reduce heat, and simmer for 10 minutes. Uncover and cook for 3 minutes or until liquid almost evaporates, stirring frequently.
Place the onion mixture in a bowl, and cool to room temperature. Stir in the plum and remaining ingredients. Cover and chill.
Yield: 2 1/2 cups (serving size: 1/4 cup)

The most classic is fresh tomatoes, green pepper, garlic, onion jalapeno pepper, cilantro and lime. Chop them all up and mix together. Store in the fridge for at least an hour to get the flavors to meld.
To get a good variety try this: small can of black beans, drained; small can of good quality corn; chopped cilantro; one chopped jalapeno pepper (seeds removed); chopped red bell pepper; then finish it off with either mango vinegar or a combination of vinegar (either champagne, rice wine or white) and pineapple juice. You'll get a good healthy sweet and hot dip.

6-8 Roma or plum tomatoes, seeded and diced. 2 cloves garlic, minced. a million/2 small pink onion, diced. a million bunch cilantro, chopped. Juice from a million/2 lime. 2 jalapenos, seeded, deveined, and chopped. Pinch of cumin. Kosher salt to flavor. blend substances mutually. conceal & refrigerate for countless hours or in one day. this is continually extra constructive after the flavors have had time to "marry"! it is the recipe that I throw mutually. I not in any respect degree something when I make it, i imagine it is optimal to easily eyeball it, and use quantities that fulfill your human being flavor. Use a lot less cilantro, or extra garlic, however. Make it great-chunky or great-advantageous. as a lot as you. also, you should use diverse peppers (habanero, scotch bonnet, or a mixture of countless), you are able to go away in the seeds and membranes in case you want it hotter. you should use a can of drained diced tomatoes if you're frequently lazy (like me) and do not sense like seeding and reducing, or once you're pressed for time (like me). I say try with a small batch first, then you actually'll have a extra constructive sense for it once you practice the "business business enterprise-pleasant" one.
