cube steak
salt & pepper (optional)
1or 1 1/2 cups self rising flour
grease
1. put salt and pepper in flour, mix well.
2.put grease in pan just enough to half way cover the cube steak.
3.Test the grease with a little flour and if its ready it will fry.
4. Put the cube steak in and brown on both sides.Make sure when you press down with a fork no blood comes out.
Then after you see no blood take it out let it cool and then eat it.
Now if you want some thats really great do all of the above but only brown a little on each side and stick it in an oven safe dish. Add a little water and bake on 300 degrees for about an hour or hour and a half. Take it out let it cool and there you have cube steak in gravy and its very tender.

I season flour with salt, pepper, paprika and a dash of cyanne pepper. I then coat the cube steak in the flour and "fry" it in a pan with a drop of oil. I cook 2-3 pieces at a time as to not crowd the pan, Take the meat out, put on a plate and keep warm in a 250 degree oven until your done. Try to not keep flipping the meat, as you will lose the breading. Then when the meat's all cooked, leave the bits of breading and meat in the skillet, add 1 package of dry brown gravy mix, add the appropriate water and season with pepper, Add the meat back to the gravy when it's done and serve with mashed taters, green beans and biscuits. Yummy!

Fried Cube Steak
1 1/2 lb fresh cube steak
1 env liptons onion soup mix
-(either; regular or golden)
1/2 c hot tap water flour (all
- purpose) salt, black pepper
Instructions
1) Cut cube steak into 4-6 oz pieces. 2) In shallow bowl, dissolve envelope
of Onion Soup mix in 1/2 cup of hot tap water. 3) Marinate the steak pieces
in the soup mixture and let stand until all the soup is absorbed. 4)
Preheat a 13" skillet (Cast Iron is best) over medium-low heat with just
enough vegetable oil to cover the bottom. 5) Roll marinated steak in flour.
6) Place steaks in pre-heated skillet and fry, turning often, until juices
run clear and coating is golden brown. (As you turn sprinkle lightly with
pepper and salt, one time on each side) 7) Remove steaks and let drain 3-5
minutes on paper towels.
IF GRAVY is desired, add 1/2 to 3/4 cup of water to hot skillet, scraping the bottom to loosed any crispies left from the steak coating. Add 1 -2 teaspoons of flour (dissolved in a small amount of cold water), with salt and pepper as necessary to make a smooth gravy.
YUM - YUM - YUM, Man that was good!
I served it with baked potatoes, real bacon bits and black-eyed peas.
