What would be the most interesting to pair with it? (yes, atheism comes first to mind, but i would like other ideas as well please) and please state why you think it would be so.

Buddhists believe in many dieties and have a strong view of reincarnation. This would be far more interesting than Islam since it's quite similar to Christianity. Or try taoism or how about some staunchly communist person?

You can't choose atheism, for it is NOT a religion, by its very definition. You might try a Siek. They are the most tolerant of the sects in India.

Wicca. Because it is about peace and love and Christians view it as devil worship. In reality, Wiccans are more "Christ-like" than Christians.

Or, Evangelical Christian and Muslim. You could show the extremist similarities between the two.

The Jewish religion, they follow the old testament and do not believe Jesus is the Son of God

Muslim: the follow the Koran, and do not believe Jesus is the Son of God

It would depend on where the characters are going... is one going to "see the light"?
Is the Christian going to be strong in their faith? Or weak and hypocritical and small minded?
If you are going to write about a Christian do you know a very strong faith filled one to model your character after?

Jewish is way out done...Movies, etc....I would go with an interesting religion like Buddist or Hindu

I think making one of the people Pagan or Wiccan would be great. Would make for loads of angst, fighting (make-up sex?) and such.

Muslim...as they share a common root, yet different branch.

Having differences and sharing things in common would provide more fodder.
