I would like to start using liquors for flavoring main dishes and desserts. I haven't done much except using wines for gravies, so I would love to read your favorite delicious recipes using spirits!

Wine or vodka can go in pasta sauces. Brandy cream sauce with peppercorns for steaks. Tequila makes a good marinade for chicken. Just put OJ, tequila, lime juice, garlic and olive oil in it. (There's no exact recipe for it.)

Here's a good and easy dessert one. Get a can of cherry pie filling and heat on the stove. Put in a splash of amaretto or brandy and cook it down. Serve over pound cake or ice cream.

1/4 cup Kahlua can go into boxed brownies with some chocolate chips.

We don't drink hard alcohol, but we have a lot on hand for cooking!

Guinness stew!

Beef and Guinness Stew
Ingredients:
2 pounds stewing beef
3 tablespoons oil
2 tablespoons flour
Salt and freshly ground black pepper
Pinch of cayenne
2 large onions, coarsely chopped
1 garlic clove, crushed
2 tablespoons tomato puree, dissolved in 4 tablespoons water
1 1/4 cups Guinness
2 cups largely diced carrots
Sprig of fresh thyme Chopped parsley, for garnish

Method:
Trim the meat of any fat or gristle, and cut into 2-inch cubes.
Toss beef with 1 tablespoon of the oil. In a small bowl, season the flour with salt, pepper, and cayenne. Toss meat with seasoned flour. Heat remaining 2 tablespoons oil in a large skillet over high heat. Brown the meat on all sides. Reduce the heat, add the onions, crushed garlic and tomato puree to the skillet, cover, and cook gently for 5 minutes.
Transfer the contents of the skillet to a casserole and pour half of the Guinness into the skillet. Bring Guinness to a boil and stir to dissolve the caramelized meat juices on the pan. Pour over the meat, along with the remaining Guinness. Add the carrots and thyme. Stir and adjust seasonings.
Cover the casserole and simmer over low heat, or in a 300 degree F oven until the meat is tender, 2 to 3 hours.

Garnish the beef with parsley and serve.

"Burgundy Beef Pasta" - 4 servings

8 oz. linguini noodles
1 pound top sirloin; very thinly sliced
2 cloves garlic; minced
1/2 teaspoon thyme
2 teaspoons oil
1/4 pound mushrooms; sliced
1 (14 1/2 oz.) can Del Monte Original-Style Stewed Tomatoes
1 8 oz.) can Del Monte Tomato Sauce
3/4 cup dry red wine

Cook pasta as package directs; drain. Saute meat, garlic and thyme in hot oil 3 minutes. Add mushrooms; cook 1 minute. Add tomatoes, tomato sauce and wine. Cook, uncovered, over medium heat 15 minutes, stirring occasionally. Serve over pasta. Garnish with chopped parsley, if desired.

Drunken Irish Lamb

3 garlic cloves, minced
1/3 jar mint jelly
2 tbsp. fresh rosemary, minced
3 tbsp. dijon mustard
3 tbsp. extra virgin olive oil
1/2 C Tullamore Dew Irish Whiskey
Salt & Coarse ground Black Pepper
4 lamb shoulder chops

Combine all ingredients and Rub into lamb. Marinate for 1-4 hours. Best if cooked on the grill, med. for about 8 min. per side. It will taste like candy.

You could also leave the whiskey out of the marinade & just drink it w/ the lamb. lol But it does taste really good w/ it! cheers

It is a simple recipe, but here it is.

Mix 4 parts vodka to one part vermouth. Shake over ice and pour into a glass.

Open a can or jar of the best green olives you can find. Let olives soak in bottom of glass. Stab olive with tooth pick and insert into mouth. When finished drink remaining liquid in glass and repeat.

This recipe serves one but multiply according to the number of guests you will be serving.

There are so many but my favorite is banana's flambee. YUMMY!You can find this recipe at epicurious. com and foodnetwork.com.
Also remember that once you cook alcohol that the flavor remains but the alcohol content goes away and also that you should never introduce the alcohol to the pan while it is on the flame. Pull the pan off first.

Apples and pork go well together.

They make a Hard apple cider called "Hornsbys". It's not too well known, but most hard ciders will do.

You can use cider with making a pan sauce as a de-glaser, or use cider instead of water when roasting pork or poultry. Cider does well as a water or stock substitute when making rice or pastas. It adds a bit of a dry sweetness to it. All you have to do is experiment.

Get out a pot, throw in 5 hot dogs& some water bring to a boil.
next break out the bottle of jack, sit back have a few shoots and watch the bubbles. this works for me
