MEATBALLS IN TOMATO SAUCE
Serve these hearty meatballs over noodles or mashed potatoes.
Active time: 40 min Start to finish: 45 min
1 (28- to 32-oz) can whole plum tomatoes
2 garlic cloves, chopped
1 teaspoon dried oregano, crumbled
1 1/2 teaspoons salt
1/2 cup fine fresh bread crumbs
1/2 cup whole milk
1 1/2 lb meatloaf/meatball mix (mixed ground beef, pork, and veal)
1 medium onion, coarsely grated
5 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon dried hot red pepper flakes
1 1/2 tablespoons vegetable oil
Pulse tomatoes with their juice in a food processor until chopped. Simmer tomatoes with garlic, oregano, and 1/2 teaspoon salt in a 3-quart heavy saucepan, uncovered, stirring occasionally, until thickened, about 20 minutes.
While sauce is simmering, stir together bread crumbs and milk in a large bowl and let stand 5 minutes. Add meat, onion, 3 tablespoons parsley, red pepper flakes, and remaining teaspoon salt and blend with your hands until just combined well (do not overmix). Form 2-tablespoon amounts into meatballs (about 20).
Heat oil in a 12-inch heavy skillet over high heat until hot but not smoking, then sauté meatballs in 2 batches, turning occasionally, until well browned, about 5 minutes. Transfer as browned with a slotted spoon to tomato sauce.
Simmer meatballs, covered, stirring occasionally, until cooked through, about 5 minutes. Serve sprinkled with remaining 2 tablespoons parsley.
Makes 4 servings.

Easy Beef & Salsa Burritos
1-1/4 lbs. lean ground beef
1- 1/2 Tbsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. frozen chopped spinach, defrosted and well drained
1-1/4 cup prepared chunky salsa
1 cup shredded Cheddar cheese
8 medium flour tortillas
Brown ground beef in large nonstick skillet over medium heat 8-10 minutes or until beef is no longer pink, breaking into small crumbles.
Pour off drippings; season with chili powder, salt, cumin and pepper.
Stir in spinach and salsa; heat through.
Remove from heat; stir in cheese.
To serve, spoon about 1/2-cup beef mixture down center of each tortilla, leaving 1-1/2 inch border at bottom. Fold bottom edge up over filling. Fold right and left sides to center, overlapping edges.

Crush some Doritos in the bottom of a baking dish. Ground the beef and drain. Add a can of cream of chicken soup, can of drained rotel tomatoes, a cup of shredded cheese. Pour over the Doritos and bake at 350 until bubbly. Great and easy.

the recipe is called shepards pie: cook the ground beef until done,use a casarole bowl or deep baking dish and add a layer of ground beef add cooked instant potatoes add a layer of shredded cheese continue adding all of the ingrediants to the bowl until full, save a little cheese for the top layer , bake in the oven for 15 minutes and enjoy!

ground beef - rice minute rice is easiest! mix together
get a green bell pepper and make stuff peppers
EASY just cut the pepper like a pumpkin the top off and mix the beef and minute rice together put it inside the pepper put in oven at 350º for 30 minutes! DONE make mash potato's to go with it! :)

Taco salad, just lettuce, kidney beans, tomatoes, olives, browned ground beef some taco seasonings, and serve with nacho chips.
2. Shepherds pie. Layer ground beef, browned with onion, top with green beans, shredded cheese and top with mashed potatoes. Bake until cheese melts.
3. Mac and Beef. to browned beef add cooked pasta with mushroom soup and cheese.

Chop and fry the beef, boil elbow macaroni as meat cook. Cut up Velveeta cheese in chunks. When Mac cooked drain add cheese and melt, may need just a little milk not much. Add beef and any spices you like; pepper, oregano, sage etc.

"Ground Beef Casserole"
1 1/2 lbs. ground beef
1 shredded onion
1 (10 oz.) pkg. frozen veggies
2 cans cream of chicken soup
1 lb. frozen Tater Tots
Place in casserole dish in above order. Bake at 325* for 1 1/2 hours, uncovered.

Cook your ground beef, drain it, add it to some macaroni and cheese (boxed kind works the best, make it according to the package), then stir in a taco mix packet. You have Taco Mac and the kids love it!

Porcupines!
1 lb of ground beef
1/2 cup rice (uncooked)
1 egg
1 tbsp oil
1 small onion, chopped
spice to taste (I prefer thyme, pepper & parsley)
Mix all together
Shape into meatballs
Place in roasting pan
Pour in 2 cups of tomatoe juice (meatballs should almost be covered in juice)
Cover
Cook 1 hour at 325 degrees
Serve with nice crusty rolls or bread
Enjoy!
