i was to make a great fantastic dinner for me and my soon to be husband. does anyone have any great dinner and dessert recipes or websites. it would be greatly apprecated

Appetizer-Black Bean Salsa
2 (15-ounce) cans black beans, rinsed and drained
1 (17-ounce) package frozen whole kernel corn, thawed
2 large tomatoes, seeded and diced
1 large avocado, peeled and diced
1 small onion, diced
1/8 to 1/4 cup chopped fresh cilantro leaves
2 tablespoons lime juice
1 tablespoon red wine vinegar
Salt and pepper

Mix all ingredients thoroughly in a large bowl. Cover and chill overnight. Taste and add salt, pepper, or more lime juice as necessary. Serve with tortilla chips as an appetizer, or with grilled chicken breast as a meal

main course-Lobster and corn chowder

2/3 cup unsalted butter
2 cups well rinsed and finely chopped leeks (white part only)
1 1/3 cups finely chopped celery
2/3 cup finely chopped yellow onions
2/3 cup finely chopped red bell peppers
2/3 cup finely chopped yellow bell peppers
2/3 cup finely chopped green bell peppers
1/2 cup chopped green onions
Reserved corn kernels from Lobster-Corn Stock recipe
2/3 cup peeled, seeded, and finely chopped tomatoes
1 teaspoon minced garlic
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon Essence, recipe follows
1/3 teaspoon crushed red pepper flakes
1 cup all-purpose flour
1/3 cup brandy
Lobster-corn stock, recipe follows
1/3 teaspoon cayenne
1 pound Idaho potatoes, peeled and diced
1 2/3 cups heavy cream
Reserved lobster meat, from Lobster-Corn Stock recipe
1/3 cup assorted fresh soft herbs, such as parsley, chervil, basil, and chives
1/3 pound bacon, cooked until crisp, drained, and crumbled

In a very large pot, melt the butter over medium heat. Add the leeks, celery, bell peppers, and 1/4 cup green onions, and cook, stirring until soft, about 5 minutes. Add the corn kernels, tomatoes, garlic, salt, pepper, Essence, and red pepper, and cook, stirring, for 4 minutes. Add the flour and cook, stirring constantly, until the flour smells slightly toasted, but does not brown, about 3 minutes. Add the brandy and cook, stirring, for 2 minutes. Add the lobster stock and cayenne, and stir well to incorporate. Bring to a boil, stirring occasionally. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, for 30 minutes. Add the potatoes, stir well, and simmer until tender, about 16 minutes. Add the cream, lobster, remaining 1/4 cup green onions, and assorted herbs, and cook, stirring, for 5 minutes.
Remove from the heat and stir in the bacon. Adjust the seasoning, to taste. Ladle into bowls and serve. Serve with garlic bread or toast

Dessert-Raspberry valentines
1 store-bought pound cake
1 pint raspberries
2 tablespoons sugar
1/2 teaspoon fresh lemon juice
1/2 cup chilled whipping cream

Slice pound cake into 4 (1-inch) slices. With a medium-sized heart-shaped cookie cutter, cut out hearts from each slice of pound cake. Set aside.
In a medium bowl combine 1/2 the raspberries and the sugar. Crush berries with a fork. Add remaining raspberries to the bowl. Add the lemon juice and mix well. Whip chilled cream until the soft peak stage.

Using 2 dessert plates, place 1 heart on each plate. Pour 3/4 of the raspberry mixture over each cake. Cover cakes with another pound cake heart. Top with whipped cream and remaining raspberry mixture

Oh oh oh this is my specialty! Small intimate dinners! First, buy a porterhouse. You MUST buy a porterhouse. This is man's favorite cut of steak. Secondly, find a grill. Sear the outside of your steak. make grill marks. 7-9 minutes each side. Put that baby in the oven. Broil it till it's the way he likes (Rare, medium, well done, etc) Add garlic mashed potatoes. (Peel and cut up potatoes really tiny. Boil till tender. Pour out as much water as you can. [While the potatoes are boiling and the steaks in the oven, cut up garlic into teeny tiny super fine pieces or you can go a la mafia and cut paper thin slices.] Mash with a fork, add garlic pieces and heavy cream and keep on mashing. add butter and more cream and keep mashing. Add salt and pepper, and if you really want to be fancy schmancy you can add either sauteed mushrooms that have been cut into tiny bits or fry a slice of bacon crisp, take the bacon oil, and break the bacon into tiny bits and add.) Add creamed spinach (A lot easier then the potatoes. Get frozen spinach. Put in a clean kitchen towel or cheese cloth and squeeze as much as you can till the juice is squeezed out. Then, put in the frying pan, add 1/2 cup sour cream and one full container of cream cheese (for every two boxes of spinach) and turn on to medium. Keep mixing till it cream cheese softens slightly, then put in a oven safe dish. Add parmesan cheese on top and put in the oven next to your steaks.) You may have JUST enough time to make carrots to go with it. Just buy baby carrots, pop them in a pot with water enough to cover half way up the carrots, add 1 tblsp. of butter and put on low-med. Start to plate everything, add carrots last and put a little chopped parsley on top to make it look restaurant quality. For your table, add candles of different sizes and stones that you can buy in pretty colors at the fish store and place them around the candles. A nice merlot goes well with this one. If this dinner is out of your price range, let me know, I know tons of other recipes and party planning but it's hard to say what you'd like without knowing a little more about you guys.

"Steak Diane" - 4 servings

1/2 cup thinly sliced fresh mushrooms
2 tablespoons minced onion
1 clove garlic; crushed
1/8 teaspoon salt
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1/4 cup butter or margarine
2 tablespoons snipped parsley
2 tablespoons butter or margarine
1-pound beef tenderloin (or rib eye); cut into 8 slices

Cook and stir mushrooms, onion, garlic, salt, lemon juice and Worcestershire sauce in 1/4 cup butter until mushrooms are tender. Stir in parsley; keep sauce warm.
Melt 2 tablespoons butter in skillet; turning once, cook tenderloin slices over medium-high heat to medium doneness, about 3-4 minutes on each side. Serve with mushroom-butter sauce.


"Noodles Alfredo" - 5 or 6 servings

8 oz. wide egg noodles
1/2 cup butter or margarine
1/2 cup light cream (20%)
1 cup grated Parmesan cheese
1 tablespoon parsley flakes
1/4 teaspoon salt
Dash pepper

Cook noodles as directed on package. While noodles cook, heat butter and cream in small saucepan over low heat until butter is melted. Stir in cheese, parsley flakes, salt and pepper; keep warm over low heat.
Return drained noodles to kettle. Pour sauce over noodles, stirring gently unti noodles are well coated.

Serve with a vegetable of your choice, then for dessert,

"Strawberries Romanoff" - 6 servings

1 quart fresh strawberries
1/2 cup confectioners' sugar
1 cup chilled whipping cream
1/4 cup orange-flavored liqueur or, if desired, orange juice

Sprinkle strawberries with sugar; stir gently. Cover; chill 2 hours. Just before serving, beat cream in chilled bowl until stiff. Gradually stir in liqueur. Fold in strawberries.
