Cold Veggie Pizza
2 Pkgs. of crescent rolls* from the refrigerator case in the store! (The kind that my kids peel and unwrap ... or whack on the side of the bar because their Mother hates to hear it pop open!!!)
2 (8 oz) packages of cream cheese
3/4 cup of mayonnaise
1 package of DRY ranch dressing
Chopped pieces of raw vegetables (I use frozen but thawed and if I'm in a hurry I thaw them in the microwave, but don't cook them and be sure to drain them)!
I use cauliflower, broccoli, carrots, you can use peas, tomatoes, black olives, green peppers, yellow cheddar cheese, just about any kind. I break the microwave thawed ones in pieces but you can chop them if you like!
Open the crescent rolls and press together to make a large crust. Bake at 325 degrees for about 7-10 minutes or so until lightly browned. Cool this. (Doesn't take long!)
Meanwhile, mix the cream cheese and the mayonnaise and dry ranch dressing together (I use the mixer). Spread this over the crescent crust. Top with the chopped items.
Cut into squares or pie shapes and serve!

There is no mystery to this, it is only Cheese and Tomato on a Pizza base, vegetarian cheese, of course, I use Onion, Peppers, whatever I have. Get your Pizza base, spread thinly with Tomato paste, then put sliced Tomatoes, sliced Peppers, thinly and Onion, remembering to season, and add a few Italian herbs if you like, grate your chosen Cheese on top, and pop in the Oven lovely! enjoy!

Oh, I do! I simply use a standard crust recipe and then mix ricotta cheese, garlic, oregano and basil and spread it over the crust. Then top with zucchini slices, artichoke hearts, fresh spinach, mushrooms and your pizza cheeses you like best. Bake it up and toss with fresh sliced green onions and chopped tomatoes. It is very tasty!
