Well, it tastes kind of like shark...
But seriously, it is a heaver fish. It's not quite as fishy as tuna and has a fairly dense texture.

I live in New England so I grew up thinking the only fish out there was Cod Schrod or Haddock.....that is besides shell fish. The first time I had swordfish it was wood grilled with butter\olive oil and a touch of lemon....the consistency of it was SO UNLIKE Cod or Haddock. I really honestly did think wow this is like a good steak! Cod and Haddock are light white and flake easily sword fish is more dense and doesn t really flake that much and if you get it grilled it has the seer marks and rich grilled flavor - sort of like a steak. Keep in mind if it s over cooked it s not going to taste that great. A friend once tried cooking it by covering with Italian salad dressing and then putting it on and electric grill for a long time. It was horrible. Wood grilled with lemon and butter is the way to go

I had swordfish last night. It's fairly meaty, a very dense texture that doesn't fall apart easily when sliced. Not disimmilar to a large pork chop lookswise. Tastewise it doesn't have the salty pungency of a lot of fish - more of a subtle tang, and definitely very steaklike in its meatiness and heaviness. Not a particularly distinctive taste on its own to be honest, which is why it's best chargrilled to give it some smokey flavour, or served with a sauce.

Swordfish tastes a lot like tuna, but perhaps a little tougher. It is great grilled with tartar dipping sauce. If it helps, in Japan tuna is called "magro", and swordfish is called "kajiki magro". Try it! It is really yummy.

I liked it. The flakes are thick and almost meaty in texture but it does taste like fish, not too strong though. Nice and filling whereas fish isn't normally.
