I think it may be due to the fact that they don't wanna be to the cause of the death, for giving any infection before the or after the death, cause if the family wanted to have an autopsy after the death, then they could be charged with the death, other than the leathal injection! sounds silly now that i have wrote this, but my best answer.

I think they do it because its procedure. Every time doctors use needles the sterilize them so it's probably force of habit.
