1/4 cup of nutritional yeast
1/4 cup of flour
1 teaspoon of paprika
1 teaspoon of salt
dash of garlic powder
1 cup of water
2 tablespoons of margarine
1 can of diced tomatoes and peppers, like Ro-Tel (drained)
tortilla chips
Combine dry ingredients in a saucepan. Add water. Whisk constantly over medium heat until it is thick and bubbly. Remove from heat and add margarine. Stir until margarine is melted. Stir in can of tomatoes.
Return to low heat and cook just long enough for toms to heat. Pour over chips and eat like nachos or use as a dip.
If you would like the dip 'cheesier' use only 1/2 can of tomatoes and peppers.
Serves: about 3
Preparation time: 10 minutes

Your family will love the bright colors in this updated nacho snack. Add even more color by using spinach or tomato flour tortillas.
Ingredients:
2 cups shredded Monterey Jack, cheddar, queso quesadilla, Chihuahua and/or asadero cheese (8 ounces)
2 to 4 tablespoons fresh or canned sliced jalapeqo peppers, drained
6 pepperoncini salad peppers, drained
1 cup canned black beans, rinsed and drained
1/2 cup salsa
1/2 cup roasted red sweet peppers, cut into julienne strips
Salsa (optional)
5 8-inch corn or flour tortillas or 4 cups tortilla chips (about 4 ounces)
Steps:
1. To make chips, stack tortillas and cut into wedges with scissors or a sharp knife. Place wedges in a single layer on an ungreased baking sheet. Bake in a 350 degree F oven for 10 to 12 minutes or until light golden brown. Remove the chips from oven. Arrange the tortilla chips one layer deep, overlapping slightly, on an 11- or 12-inch ovenproof platter.
2. In a saucepan combine black beans and the 1/2 cup salsa; cook and stir over medium heat just until heated through. Remove from heat; spoon bean mixture over chips.
3. Sprinkle cheese, red peppers, and jalapeno peppers over bean mixture on chips. With a small sharp knife, slit pepperoncini peppers; remove stems and seeds. Cut into strips; sprinkle over nachos. Bake in a 425 degree F oven for 3 to 5 minutes or until cheese is melted. Serve immediately with additional salsa. Makes 12 servings

Here's a twist.
Take a casserole dish (small square is your best best) and cover the bottom with a decent layer of cream cheese
Top with no-bean chili (or if have access to Cincinnati chili, throw some Skyline on there), like Hormel
Add a nice thick layer of shredded cheese...
Microwave or bake till warm
Dip your chips!

Velveeta cheese with a can of Wolf chili is a good, quick, and inexpensive nacho dip. I will warn you it is extremely rich in flavor. It also makes a good hot dog sauce.
