I too am doing something like that for my grandfather and my uncle. You could try something like:
"We honor those who could not be with us today. You're here in spirit and always in our hearts"
That's kind of along the lines of something I came up with for mine. Good luck!

My Mother passed away 4-years ago and we had on our program "We think of those who are with us in spirit today" and then listed everyone. We also had a vase on the alter with a variety of color roses - each rose was dedicated to someone's memory. We outlined who was what color rose in the program.
Wearing your Mother's gown is such a perfect way of honoring your Mother. I wore my Mother's wedding band. Best wishes!

Here is what we wrote for our program:
~To Our Family and Friends on Our Day of Marriage ~
We would like to take the time to thank everyone who has helped to make this, our wedding day, a most beautiful and memory-filled occasion.
To Our Parents: Your love, patience, and understanding have been a source of happiness and great support in planning this day, and in planning our lives together as Husband and Wife.
To Our Brothers and Sisters: You were always there when we needed you – thank you for your love, affection, and support.
To Our Bridal Party: Thank you for all of your tremendous cooperation, support, and smiles in helping to make this day so very special.
To Our Relatives and Friends: For your never-ending love and Support - this will always remain in our hearts. For those who had to travel a great distance or simply down the road, thank you for sharing with us the most important day of our lives.
With Love and Thanks,
(Your first name's)
For your very special instance -- and by the way, how amirable of you -- you could include a very special message to your Mother and friends.
To My Mother -- I wear your wedding dress today to honor your memory and your legacy and to always remind me of how special you are to me and I am to you. I wanted you to be with me on wedding day and you are. I love you.
To My Friends -- I miss you and love you very much and on this day, I honor your memories and the laughter that we shared. I know that we shared a true bond of friendship and today, I know that you are here with me as well.
-- Best of luck and Congratulations!

Very respectful and thoughtful of you Michele, and I applaud you for those feelings.
But your wedding is about you, your hubby, and your future. Nothing wrong with speaking a few words after the wedding to honor them, or even a small piece at the bottom of the program. But don't let that be the centerpiece of your wedding.
Good Luck

You could try something like thank you to all our friends and family who have had such a wonderful impact on our lives, especially our parents here with us today, names, and to name, the mother of the bride, who joins us today in spirit as she has already gone on to her final reward. You have taught us to love by the love you have always shown to us and to each other.
Depends on your relationship and what you really want to say. You could go very simple - in loving memory of name, mother of the bride. You could go more flowery (as above). It depends on what feels right.

Our program said, "Lovingly remembered today..." and then listed the family members who were gone and their relationship to the bride or groom.

Your wedding is not the occasion for this at all. Of course, you will be thinking of your mother, and its awesome that you are wearing her wedding gown.

What about "In loving memory of..." then list their names. As for you wearing your mom's dress, when people ask you about it proudly tell them you're wearing her dress.
