Bread has moisture already trapped in by the crust, whereas biscuits when baked are generally devoid of moisture, which they then get from the atmosphere.

Im not sure but I know that this is the way they decide if something is a cake or a biscuit. Jaffa Cakes were going to have taxes put on them like biscuits but when left out they went hard so had to be categorised as bread and could not be taxed.

Or something along those lines.

Intresting one....Hmmm indeed, I see the problem
Well if you see the bread is soft, and contains air inside it, and oxygen
And when left out, slowly the oxygen leaves it, leaving it to go hard. And biscuits well, I'm not sure, I'm just making up my own theory of this. Hmmmm maybe biscuits, want to go soft, so they do.

Who knows, why don't you ask the bread and biscuit this question?

Not sure what kind of biscuits you mean, but mine turn into hockey pucks if I forget and leave them out overnight. Doesn't matter if they're store bought or homemade, next day they're hard as a rock.

except in scotland it all goes green there and is then collected made into a pulp and then turned into tartan kilts.

thats why they say the scots are sweet as a dangler nut.
