Does anyone have a chili recipe that will "stand out"? Possibly using a combination of meats. It can be beanlesss. Could be hot but not necessary. Some friends are hosting a Chili Cookoff this weekend and I want to WOW them.

Winning Recipe: 2005 International Chili Society Cook-Off



Dog Breath Chili

Ingredients:
6 ounces regular breakfast sausage
2 teaspoons Wesson® Oil
3 pounds tri-tip beef, cut into small pieces or coarse ground
1 medium onion, finely chopped
1 can (14 1/2 ounces) beef broth
1/4 teaspoon oregano
3 tablespoon cumin
7 cloves Gilroy garlic
2 tablespoons Gebhardt® chile powder
1 tablespoon hot chile powder
1 tablespoon mild chile power
5 tablespoons red chile powder
1 can (8 ounces) Hunt’s® Tomato Sauce
1 can (10 ounces) Ro*Tel® Diced Tomatoes and Green Chilies
3 Dried California chile peppers, boiled and pureed
1 Dried New Mexico chile peppers, boiled and pureed
5 Dried Cascabel chile peppers, boiled and pureed
1/2 teaspoon cayenne pepper
1 can (14 1/2 ounces) chicken broth
1 teaspoon Tabasco® Pepper Sauce
1 teaspoon brown sugar
juice of one lime
salt to taste

Instructions:
Brown the sausage, dry, and set aside. Heat oil in a pot, and brown the beef. Add the cooked sausage to the pot. Add the onion and beef broth to cover the meat. Boil for 15 minutes. Add oregano and half of the cumin. Reduce heat to a light boil, and then add the garlic. Combine the chile powders into a mixture, then add half of that mixture, and cook 15 minutes. Add the tomato sauce and Ro*Tel® with the puree from the dried peppers. Add the chicken broth for the desired consistency. Cook for one hour, stirring often. Add the remaining chile powder mixture and the remaining cumin, and simmer for another 25 minutes on low to medium heat. Turn up the heat to a light boil, and add the Tabasco®, cayenne pepper, brown sugar, lime juice and salt.

I just made some chili 2 days ago and it was awesome.
Here's my recipe (makes about 5-6 servings):
start by sauteeing chopped yellow onion and a tablespoon of minced garlic (found in produce dep't of grocery store). Once that is a little brown, crumble in 1 lb of ground beef. Add seasonings such as salt, seasoned salt, white pepper, and a dash of cayenne pepper.
Once the beef is all browned, drain the fat and add 1 can of diced tomatoes (Hunts or Del Monte i think makes a type that is "Chili ready") and add 1 can of the following:
Great Northern Beans
Light Red Kidney Beans
Pinto Beans
½ can of Dark Red Kidney Beans
And sometimes i add a small amount (½ cup) of tomato sauce
Add a little water and let simmer for 30 mins. Add more seasons if necessary

INGREDIENTS
1 pound ground beef
1 cup chopped onion
1/2 cup chopped green bell pepper
2 1/2 tablespoons chili powder
1 clove garlic, minced
1 bay leaf
1/2 teaspoon ground cumin
4 teaspoons finely chopped jalapeno chile peppers
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (16 ounce) can chili beans, undrained
salt and pepper to taste
DIRECTIONS
In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Saute for about 5 minutes, or until beef is browned. Drain excess fat.
Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally. Stir in the beans and heat through.

Brown 1 1/2 lbs. ground beef, 3 med. chopped onions and 2 cloves garlic. Add 3 cups tomato juice, 3 cups water, 3 bay leaves, 1 tablespoon salt, 2 to 3 tablespoons chili powder, 4 cups cooked pinto beans and simmer.
Optional: 2 chopped hot peppers
This is a favorite of ours. Remove bay leaves before serving.

This chili is similar to Wendys Chili, easy to fix and you top it off with shredded cheddar cheese and sour cream& chives.
1 1/2 to 2lbs of hamburger I usually double the recipe as this is a thick hearty chili
1 T Chili Powder
1 Can of French Onion Soup
2 teaspoons of cumin
Few drops of tabasco sauce
1 1/2 teaspoons of black pepper
21 oz can of red kidney beans, or two small cans
1-6oz tomato paste
1-8oz can of tomato sauce
Brown hamburger, drain off grease add kidney beans and juice add all other ingredients and simmer and stir often.
This chili will be thick and hearty, if we have company and I fix it I rarely have any left if I make a double batch. Good Luck

I used to do a tuna chili years ago. Unfortunately, I think the only difference in chili recipes is the heat level. lol I like small bite size chunks of loin(any kind) slow cooked with onion and garlic. Slow cooked for hours. Good Luck!

Skin a whole raw chicken and let it boil 30 minutes. Allow it to cool and debone the chicken, return the meat to the broth in pan. Add 2 table spoons of salt, 2 small cans of white navy beans (drained), 2 cans of diced green pepper,

cook/brown 1 tube of ground pork and 1 large yellow onion in a separate pan. Drain of grease. Add to chicken mixture. Let it all boil 15 minutes. Then add 2 soft corn tortillas, chopped. Simmer, stirring occasionally until corn tortillas are dissolved and chili is thickened. Then add about 1/3 cup of cream til it is white and creamy. WHITE CHICKEN CHILI!

How about making a "White Chicken Chili?" You use navy (white) beans and grilled chicken (like fajita meat). I don't have a recipe, but it would be different and yummy! I'm sure All Recipes dotcom has a myriad of recipes for it.

My grandmother used to make chili and her secret ingredient was a tablespoon (or so...she never really measured) of cocoa powder.
