I use cottage cheese in my lasagna, but not frozen, you should never freeze milk products, except icecream, because when they defrost a lot of the taste has gone, like in milk, but cottage cheese also has a lot of water content, and putting it in frozen in lasagna, will make it watery even more, and taste like mush.

Umm.......Yick.

Throw out the frozen cottage cheese (why is it frozen?), and buy a nice new tub of ricotta (same amount as your recipe calls for cottage), which will give your lasagna a much better taste and texture than any cottage cheese would.

I'm with "concerned". Chuck the cottage & get yourself a tub of whole milk ricotta. And no, you don't HAVE to put an egg in it before you spread it in your lasagna.

Cottage cheese is virtually flavorless (except for salty), and ricotta is irreplaceable. Live a little & put in the good stuff! :)

I didn't even realize you could freeze cottage cheese.. I would think to defrost it first and make sure the texture is the same as before freezing. If it is, then I don't think there would be any difference.

in 27 yrs of cooking for the public, I have never heard of frozen cottage cheese...did you freeze it or does it come that way where you live?....

Nah, it'll be fine in a casserole. I wouldn't eat it straight w/ fruit after freezing, but for lasagna it'll be great.

thaw the cheese and put it in the food processor to break up the chunks, so its a smoother consistencey like ricotta
