Cream and Strawberries
This is also a nice recipe :
Peach Blueberry Pancake Syrup
1 cup sliced fresh peaches
1 cup fresh blueberries
2 tablespoons sugar
1/2 cup unsweetened apple juice
dash of ground nutmeg
Combine 1/2 cup peaches, 1/2 cup blueberries and remaining ingredients in a small saucepan. Bring to a boil; then reduce heat and simmer, uncovered, 15 minutes. Add remaining fruit, stirring well. Serve warm over pancakes or waffles.

Sliced apples sauteed in 1/2 fresh butter 1/2 Calvados and a sprinkling of lemon juice to help stop the apple browning.
As the apples are nearly done add some Maple Syrup, a further dash of Calvados to stir the maple syrup and stop it sticking to pan.
Then turn off the heat and add some more Calvados - all the alcohol from the earlier additions will have evaporated!
Quickly assemble the pancakes with the filling - and serve.

99% of the time, pancakes do not have filling.
But at some pancake houses, you can get blintzes, which are basically pancakes, that are rolled up and filled with ricotta cheese and topped with strawberries and whipped cream. Other times, they;re filled with strawberries but not as often.

Here in Holland they eat pancakes with many many sorts of filling even with bacon, cheese, anything. You name it they put it in the pancakes. Yuk! I just like them with a sprinkle of castor sugan and a squeeze of lemon, then rolled into a sausage shape. Yummy!

Oh my god, I just had the best pancake ever. I tossed thin slices of apple in cinnamon sugar, then sauteed them in melted beuuter, then just poured the pancake batter over top & put it in the oven.
It was SOOOO good, the sugar and butter made kind of like caramel with the apples....mmmmm....

Whipped double cream,mixed with chopped banana. Put this into the pancake, roll up and cover in melted chocolate... ooohhhh
