Eight candles, nine with the "shamash" (the lighting candle).
You start the first day with the "shamash" and light one candle. On the second day you light two candles, and so forth till the eighth and last day of Hannukah, were you should light the whole eight candles with the "shamash".
The lighting of the candles is for the memory of the oil cruse miracle.

One helper candle, and one candle each night. This commemorates the miracle of the oil that lasted for 8 days even though there was enough for only one...
This is the story:
The Greeks destroyed the first Temple in Jerusalem (the Romans destroyed the second one), and the Maccabees, a few Jewish warriors, fought the large Greek army bravely.
When they began restoring the Temple to its former condition, they wanted to relight the menorah which was always lit, 24/7.
The problem was, that they could not find any kosher olive oil, since the Greeks broke everything in the temple. In those days, it took eight days to make a fresh supply of olive oils, and the Maccabees found only one intact bottle of oil.
They re lit the menorah anyway, and set about making more olive oil. The miracle was, that the menorah stayed lit until the new oil was ready to be used.

From 2 to nine, starting with 2 and going up 1 each night, with 8 to symbolize the 8 days that our oil lasted, and 1 to serve as light, since we can't benefit from the 8.

I am jewish so I will tell you about it. The story is that the Macabbis burned down the Temple in Israel. The only thing that was left was a menorah that was out of shape. The Isrealites had only enough oil to last one day but when they lite it, the oil lasted for seven days.
