I'm going back to school because I'm tired of chemical plants. Which one of these two has more potential? If I can't determine between these two I'm going to have to flip a coin.

Its depends on your interest and your background. Plz don't take any new thing which you are not able to handle afterwards. Both of them have has good potential.

My opinion is: nanotechnologies.

In the materials science and engineering, nanothecnologies are climbing, and very many applications are coming in the future.

Optics is a classical topic of physics, but nanothecnologies are more oriented towards the future.
The fields of applications are many: engineering, medicine, biology.
The dark side of the story is that nanotechnologies are complex and at leading edge of reasearch nowadays. This means that you cannot easily think to an employement in a nanothecnology industry starting next week.
At the moment researchers and highly specialized engineers are heavily working in the field, but the real industrial exploitment of these new technologies is not behind the corner.

I think optics. Optics is basic science field. Nanotechnology is conglomeration of a few fields. If you start from optics, you can later make your way to nanotechnology.
