I would have to say an uneducated person might think that, and to me it sounds a little racist.

Well actually that is not strictly true. You can have white italians, black italians, asian italians........I know what you meant though, someone assuming that a caucasian italian was not caucasian....don't worry some people are just not capable of using their brain cells or they have a few missing. Really depends on who you ask. But for US government nosey sake: yes, italians are classified under "white".
