I have written many recommendations and would be embarrassed to receive a gift.
It would be gracious to thank the professor warmly - and that can be by a letter or note or, best of all, in person.
Do not thank him or her by email.

As a teacher, any gift from a student is special. I (like most teachers I know) have a warm fuzzy box of things our students have given us; letters, cards, the pitiful home-made crap, it's all in there. For a professor though... well... gift certificate's out. Letter is good. Present is better. How nice was the letter of recommendation...?

A 'Thank you' card is enough. It is a professor's job to do things like write letters of rec. But if you want to be generous and "poor college student" doesn't apply to you, enclose a gift card.

I think a heartfelt letter would cut it, but perhaps if you feel a greater sense of gratitude maybe a small gift as a token of your appreciation - pehaps a nice pen or a nice bottle of wine, or like you said maybe a gift certificate for a CD or something similar

Write something on a thank you card (easy ones to find at almost anywhere). It is neat, thoughtful, and polite. If you have a strong friend-type buddy-buddy kind of relationship, a gift could be appropriate.

a sincere card expressing all the sentiments you have for such a kind gesture will do. you may add a gift, maybe a good wine, or a pen, something that he will be able to use in his work.
the most important thing is for you to always keep in touch with him, update him with your whereabouts, and he will know that you have put with so much importance and regard in your life

I personaly would write them a thankyou note and personally walk it in to this person and say Thankyou and hand it to them. and even possibly tell them about what you are doing that their letter helped you with
