CABBAGE SOUP

(This recipe has also been known as the "Cabbage Soup Diet" and the "Dolly Parton Miracle Diet Soup"! It is very tasty though.)

2 large onions
2 green peppers
whole tomatoes, fresh or canned
1 large head of cabbage
1 large bunch of celery
2 quarts water

Season with onion soup or other herb seasonings. Cut ingredients into medium pieces and boil for 10 minutes. Simmer until vegetables are soft.

A typical country bean soup. We have found versions of this classic soup in each country we visited. Our favorite is the traditional soup prepared in Galicia, Spain, with their local ham (lacon), green vegetables (grelos) and potatoes (cachelos), ask for "Caldo Gallego" or "Pote Gallego" if you visit the region.

1 cup dried beans
1/2 lb country style ham, scrubbed and soaked if required
1 tbsp olive oil
4 cups raw cabbage, chopped

3 medium potatoes, peeled and diced
1/2 tsp paprika
water, salt to taste.

Wash the beans, cover with cold water and soak for 8 hours or overnight.

Drain and bring to a boil into a large pot with 1 gallon water. When the liquid starts boiling, add the meat, paprika, and olive oil. Reduce heat and simmer for 90 minutes.

Add the potatoes and cabbage. Simmer until beans are tender. Don't add salt before testing first, the ham usually brings a strong flavor.

Dice the ham, if you are going to serve with the soup, and serve very hot.

Servings: 6
Yield: 6

SUPER SHORTCUT: Use 2 cans (Net WT 15 oz) white beans of any kind. Drain and wash the beans, use cooked ham or serrano. Cover the beans with water and bring to boil, add the rest of the ingredients. Simmer until the potetoes and cabagge are cooked, about 20 minutes. Adjust salt.

"Chicken-Cabbage Soup" - 6 servings

5 cups finely chopped green cabbage
2 cups (1/4" slices) carrots (about 4 medium)
1 cup chopped celery (about 2 medium stalks)
3 cups eight-vegetable juice (V8 juice)
2 cups chicken broth
1/4 teaspoon pepper
1 medium onion; sliced
3 to 3 1/2 lb. cut-up broiler-fryer chicken
1/2 teaspoon paprika

Heat all ingredients except chicken and paprika to boiling in Dutch oven or large pot; reduce heat. Cover and simmer 30 minutes.
Meanwhile, remove skin and fat from chicken pieces. Sprinkle chicken with paprika. Spray 10" skillet with nonstick cooking spray. Cook chicken in skillet over medium-high heat about 15 minutes or until light brown on all sides; drain. Add chicken to cabbage mixture. Heat to boiling; reduce heat. Cover and simmer 35-40 minutes or until juices of chicken run clear.

You will need a LARGE stew pot.
1 lb. stew meat (cut up in small pieces) or hamburger.
add water as needed.
1 whole onion chopped.
2 cups sliced celery.
1 bag frozen sliced carrots.
1 can green beans.
1 can sliced mushrooms.
1 can tomato sauce.
3 fresh zucchini sliced (about 6 in long-no need to peel)
1 head of shredded cabbage.
cover with water and season with beef bullion.
bullion is salty so I don't use salt.
serve with french bread and sprinkle with Parmesan cheese.
Once you have made this recipe you can improvise by adding other veggies or some pasta.
