Buffalo Chicken Wings
24 chicken wings (see Note)
10 tablespoons (1¼ sticks) unsalted butter, in all
1 tablespoon cayenne, in all
3 tablespoons Chef Paul Prudhomme's Poultry Magic®, in all
2 cups vegetable oil
Remove the chicken wings from the refrigerator and let them come to room temperature. If they're cold, the butter will congeal and won't coat the wings evenly.
Melt 5 tablespoons of the butter with 1½ teaspoons of the cayenne in a small saucepan over medium heat. Remove from the heat and let cool slightly.
Cut the chicken wings into 3 parts at the joints. Discard the tips or use them for another purpose, such as making stock. This will leave 2 meaty parts per wing for this recipe.
Place the wing pieces in a medium mixing bowl, sprinkle with 2 tablespoons of the Poultry Magic, and add the butter/cayenne mixture. Work the butter and seasonings into the wing pieces, distributing the seasonings as evenly as possible.
Heat the oil in a large skillet over high heat to 375°, using a cooking thermometer or an electric skillet to be sure the oil's temperature is maintained. When the oil reaches 375°, add as many wing pieces as will fit easily in a single layer. Fry until they are brown, about 4 to 6 minutes. Drain on paper towels and repeat with the remaining chicken.
Meanwhile, melt the remaining 5 tablespoons of butter in a small skillet over low heat. Add the remaining Poultry Magic and cayenne, cook until the butter starts to brown, then remove from the heat. When all the wing pieces are cooked, put them in a bowl and pour the hot seasoned butter over them, then toss until the chicken is coated.
Serve with blue cheese dressing, Chef Paul Prudhomme's Magic Pepper Sauce⢠and celery sticks.

Time consuming but the best wings ever..
Take some flour and add garlic powder, onion powder, celery salt, seasoned salt, paprika, and chili powder according to taste. Put in a big baggie and add wings a few at a time. Shake to coat. Lay out on a tray and refrigerate for one hour. Take out and coat again. Now fry wings in enough oil to cover. For sauce use 1/2 cup butter, 1/3 to 1/2 cup hot sauce, one T. vinegar, and one T. brown sugar. Mix together and bring to a boild. remove sauce from heat and pour over wings. These are the best wings ever!!!

INGREDIENTS

* 1 pound chicken wings
* 1/2 teaspoon salt
* 1/2 teaspoon ground white pepper

* 1/2 teaspoon hot pepper sauce

* 1 cup mayonnaise
* 4 tablespoons minced onion
* 3 cloves garlic, minced
* 1/3 cup chopped fresh parsley
* 1/2 cup sour cream
* 1 tablespoon lemon juice
* 1 tablespoon distilled white vinegar
* 1/2 cup blue cheese, crumbled
* 1/8 teaspoon salt
* 1/8 teaspoon ground black pepper
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large frying pan or deep fryer, heat oil to 375 degrees F (190 degrees C). Fry wings for approximately 8 minutes. Transfer wings to a paper towel and let drain. Season with salt and white pepper. After the wings have drained, place them in a large mixing bowl.
3. In a small saucepan, melt butter or margarine. Stir in hot pepper sauce. Pour mixture over chicken wings, toss to coat the wings. Place wings in a baking dish.
4. Bake 15 to 20 minutes.
5. While the chicken wings are baking, make the blue cheese dressing: In a medium size mixing bowl, combine mayonnaise, onion, garlic, parsley, sour cream, lemon juice, vinegar and blue cheese. Blend the mixture well. Arrange the baked chicken wings on a serving platter. Serve with blue cheese dressing.

This is the best! My husband and I love these!
Deep fry your wings until medium brown. Make a sauce of 3/4 cup butter, 1/3 cup of your favorite hot sauce, and a packet of Good Seasonings Italian dressing mix over med-low heat. Coat the wings in sauce, bake in a 350F oven until done, about 20 minutes to half an hour.
Serve with bleu cheese dressing!

Hi...I make them all the time. I buy a bag of wings and then marinate them in buttermilk overnight. I dredge them in flour and fry them just like I am frying chicken. I also melt about a 1/2 stick of butter and then add Crystal Louisiana Hot sauce to it or Franks Red Hot and a quick splash of lemon juice. I then use an old cake size pan and place some of the wings in there and spoon some of the sauce in there over the wings and toss them well until coated. I like them dipped in blue cheese and in homemade ranch dressing.

Celery sticks
1 bottle (8 ounces) blue cheese dressing
Cut tips off wings at first joint; discard tips. Cut remaining wings into two parts at the joint; sprinkle with salt and pepper. Heat oil in deep fryer or heavy saucepan to 375°F. Add half the wings; fry about 10 minutes or until golden brown and crisp, stirring occasionally. Remove with slotted spoon; drain on paper towels. Repeat with remaining wings.
Melt butter in small saucepan over medium heat; stir in pepper sauce and vinegar. Cook until thoroughly heated. Place wings on large platter. Pour sauce over wings. Serve warm with celery and dressing for dipping.

First deep fry the wing at 375 or so for about 15mins.Heat some butter in a sauce pan add a little vinagar some salt and freshly cracked black pepper. durkys is good for the hot sauce or louisanny stirr the wing around in the pan for a while. Then put them on a cookie sheet in the oven for about 15 mins in the oven turning them once.If you like them hot like me you can but them back in the sauce then back in the oven for another 15 mins. make sure the oil is hot before putting the wings in

"Buffalo Chicken Wings" - 24 pieces
2 lbs. chicken wings
Salad oil
1 tablespoon Louisiana hot pepper sauce
1/4 cup butter or margarine; melted
Blue Cheese Dressing (recipe follows)
Celery sticks
Carrot sticks
1) Cut tips off wings (save for soup). Split each wing at joint into 2 pieces.
2) In 4-quart saucepan, heat 2" salad oil to 375*. Lower wings into oil. Fry 15 minutes or until very tender. Drain on paper towels.
3) Meanwhile, in large bowl, stir together hot pepper sauce and butter until well blended. Add chicken wings; toss gently to coat well.
4) To serve: Arrange chicken in bucket or on platter. Serve with Blue Cheese Dressing for dipping, celery and carrot sticks.
BLUE CHEESE DRESSING:
1 cup mayonnaise
1/2 cup crumbled Roquefort or blue cheese
1/2 cup sour cream
1 small clove garlic; minced
1 teaspoon Worcestershire
1/4 teaspoon salt
1/8 teaspoon pepper
Dash hot pepper sauce
Milk
In small bowl, combine all ingredients except milk; mix well. Thin with milk to desired consistency. Cover; refrigerate until serving time. Yields 2 cups.

Coat the wings in flour and then deep fry them until they are crispy.
Then 'shake' them in an equal mixture of melted butter and Frank's Red Hot Sauce. You can modify this based on how hot you want them!
They are amazing!
