Hi Sam,
I hope that you are doing well and having a good time in Canada.
(this is correct grammar but you might want to say 'I hope that you are doing well and that your life is going well. What is it like living in Canada?' or something because the way you worded it made it sound like someone going on vacation to Canada.)
What's up with your friend Amey, is she all right?
I have a request to make. If you don't mind, could you please do something for me? Please __________________________.

Thank you!
From,

Hi Sam,

I hope that you are doing well and are having a good time in Canada. What's going on with your friend Amey, is she all right? I would like you to do something for me, if its not too much trouble.

Hi Sam! How are you doing? I am doing alright. I was thinking about you and wanted to write to you. How are things going in Canada? Are you having a good time? I hope so! Your friend, Amey, how is she doing? I wanted to write to you and see how your doing and I also wanted to ask you if maybe you could do me a big favor? If not I understand but just thought I would ask. I hope to hear from you soon and if you could do this for me, that would be great! Thanks Signed (your name)

Hi, Sam.
I hope you are doing well and having a very good time in Canada.
What's up with your friend, Amy there? Is she all right?
I have a request if you don't mind. I want you to do something for me.

There. Fixed. You just need to work on your capitals, some punctuation, and some wording. Good luck.

1-Hi Sam,
2-I hope you are doing well. And I hope you are having a very good time in Canada.
3-How is your friend Amy doing? Is she alright?
4- If is is not too much trouble, I would like you to do something for me.

And the plot thickens!
