got a old loaf of bread lying around easiest thing in thw world too aclompish hons, okay take a old loaf of bread and break your bread up into tiny pieces, okay,,-- then add, parsley too, toour bread--and-- sage hons-- and if your cooking a turkey-- or chicken for that materr-- ad the broth too your bread crumbs--- not a lot and stir in the broth mix-- a little at a time hons-- if your not doing anything like chicken or turkey you can add browne gravy mix too it or-- any other kinds of -- made up gravy mixes dont use the gravy mixes dry-- cook your gravy mixes seperately the repeat the steps for the bread crumbs okay hons??

Southern Cornbread Stuffing Recipe courtesy Paula Deen

Cornbread, recipe follows
7 slices oven-dried white bread
1 sleeve saltine crackers
8 tablespoons butter
2 cups celery, chopped
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage (optional)
1 tablespoon poultry seasoning (optional)
5 eggs, beaten
Preheat oven to 350 degrees F.
In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside.
Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 minutes. Serve with turkey as a side dish.
Cornbread:
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil
Preheat oven to 350 degrees F.
Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
To serve, cut into desired squares and serve with butter.
Yield: 6 to 8 servings

For a 12-14 lb turkey:
1 1/2 loaves of bread
sm onion
3-4 stalks celery
3 tsp poultry seasoning
2 eggs
Cut bread in cubes and let sit overnight to dry out.
saute onion, celery in 1 stick butter add poultry seasoning and pepper.
add to bread cubes and add egg and chicken broth to absorb.You want this wet as the egg will bind it and cooking will take out moisture.
You can also add cooked sausage, oysters or mushrooms. Before adding egg taste to see if you need more poultry seasoning, everyones taste is different. Some bread company's at this time of year sell a seasoned bread that's excellent such as pepperidge farm but you have to get early it goes fast.

What you need:
1 loaf homestyle white bread
(not wonder bread type - French bread is good)
1/2 loaf wheat bread
(a good whole wheat and grain type works best)
1/2 loaf dark rye
(I use pumpernickel)
1T ground Sage,or poultry seasoning
1 t pepper
1t salt,or to taste
4 eggs
1/2 stick butter or margarine
1 can chicken broth , or homemade 1 1/2 c stock
figure for enough to serve 12 people
What you do:
shred all bread, to fine pieces, 1inx1in
add to this
1T ground Sage,or poultry seasoning
1 t pepper
1t salt,or to taste
mix in 4 eggs 1/2 stick butter(more if not baking inside bird) and 1 can or to need of chicken broth,just mix until it sticks together
put in bird and bake, or in pan, cover with foil,
if baking separately , mix it more moist than if using as stuffing

"Mushroom Stuffing" - 9 servings
1/3 cup butter or margarine
1 cup sliced mushrooms
1/2 cup chopped celery
1/3 cup onion
1 (10 3/4 oz.) condensed chicken broth
1 (8 oz.) package herb-seasoned stuffing mix
1 egg; slightly beaten
2 tablespoons chopped parsley
1) In 10" skillet over medium-high heat, in hot butter, cook mushrooms, celery and onion until tender, stirring occasionally. Add chicken broth; heat to boiling. Remove from heat.
2) Stir in stuffing mix, egg and parsley. Use to stuff chicken, turkey or capon. Yields 4 cups.
(Baked Mushroom Squares: Prepare as above, but spoon into buttered 8x8" baking dish. Bake @ 350* - 20 minutes or until hot and set. Cut into squares to serve.

stale the bread for a couple of days, when good and staled, boil the potatoes, add potatoes, chopped onions salt and pepper and savory to the bread, now squish it with your hands until a uniform mixture is made, now stuff whatever your stuffing and pop it in the oven

Cook the giblets (or about 1/4 lb of chicken livers) in just enough water to cover them, until completely cooked through. Cook about 1 lb of potatoes until soft enough to mash.
Grind a loaf of fresh bread, of your choice, into powder (fresh bread retains moisture). In a blender, grind 1 stalk of celery, one small yellow onion, and one can of mushrooms. Add the water and giblets, and grind completely.
Pour the liquid into the bread crumbs, and work into a thick mash. Add the mashed potatoes. Add a few sprigs of fresh rosemary, and salt and pepper to taste.
This was my grandmother's recipe, and I added the mushrooms and rosemary. It never comes out dry or flavorless. If you are really squeamish about the giblets, you can use concentrated chicken stock instead, but the giblets are better.

Is it the same as dressing? We use the following;
cornbread baked and crumbled
crackers
boiled chicken deboned
cream of chicken soup from the can
chopped celery and onion
salt and pepper
a couple of eggs
the broth from the chicken
Mix together and bake.

Yes - 2 cups of breadcrumbs, half cup chopped dried apricots, half cup chopped pistachio nuts, half cup chopped onions, half cup chopped bacon, teaspoon tarragon, teaspoon dill, teaspoon advocado oil, cracked black pepper (especially good for chicken and pork) and I know I'm missing something.
