hmmm - so many choices!
bacon (bits or real), cheese (shredded and sauce), broccoli bits, sour cream, butter, salsa, pico de gallo, lemon butter, onions, chives, chili
you can also do twice baked poatoes with stuff in them, and serve them as a main course
to do this:
bake the potatoes until done
scoop out the potato part, and leave the skin whole (think potato boats)
mash the potatoes with a little bit of butter and milk, then add anything you want (except sour cream or salsa)
put this concoction back into the potato boats (if you want to be fancy, use a pastry bag with a really big tip, or you can use a small ice cream scoop) - top with shredded cheese, if you want
bake the potatoes again for about 15 minutes
serve with sour cream or salsa, if appropriate

MMmmm... baked potato... I'm always partial to broccoli and cheese, but other good options are if you do a chicken and salsa with some sour cream, cilantro and chives. Very filling!!! You could also do twice baked potato's with a chicken, corn and mashed potato filling. I would have a picnic-style spread of all the traditional toppings from sour cream, chives, butter (maybe have different flavored butters??), bacon bits, cheese, etc... then have two or three other options for toppings like the broccoli and cheese or chicken and salsa. Sounds tasty!!! Can I come??? Lol!

The ideas that people are listing sound great! I'd also go through your spices and see what types of spices would work well with the potatoes. Items such as onion powder, garlic powder, garlic salt, kosher salt, taco seasonings, Italian spices, all work well.
Don't forget those who might prefer some lowfat low salt items. Items such as I Can't believe It's not Butter Spray and margarine as well as butter would be nice options.
Besides the chili and beef stew, what else goes with potatoes? I'd wonder also about some sort of chicken (such as a chicken flavored gravy with pieces of chicken in it).
Another option would be to go vegetarian. Think again in terms of veggies that go well with potatoes.
The baked potato bar sounds like a winning idea!

Make a batch of chili to pour on top of the baked potato. Add cheese to make it hardier. Another idea is taco meat for a mexican potato or a something simple like sour cream and butter.

you could add chili to the topping bar, and if any of your friends are vegetarian, u could make vegetarian chili too. other toppings coud be spring/green onions, sour cream, bacon, ham, cheese, paprika, tomato soup, onion (carmelized or not). You could even try and make some sort of beef stew if you wanted. I was a neat idea for serving soup on the food network, if u get a crusty bread shaped like a round loaf u can cut the top off and hollow out the inside to serve the soup in; maybe not the most practical, but it looks neat! XD

Almost anything goes, in addition to the usual chopped scallions, cheese, bacon and sour cream.
To make it a main dish, consider a tub of hot chopped barbecue beef, broccoli in cheese sauce, chile, meatballs in sauce, creamed seafood or in a mornay or a la king sauce, or almost any leftover meats in sauce or gravy.
Or make a pot pie potato. Make a cream sauce with milk and add a drained can of mixed vegetables and salt and pepper. Add cubed chicken, turkey or beef to this and pour on the potatoes.

Cut up small veggies, like broccoli sticks or cauliflower, either just plain or in a cheese sauce

And then various flavors of herbs and spices, like garlic, dill, be as creative as you want with it!
