The cans/jars are vacuum sealed at the factory, which kind of draws the aroma out of the beans into the open space left in the container. If you were to vacuum seal your coffee container every time you made coffee, you would get that aroma everytime you open it.

Ok Here you go. It is vacuum packed ( all the air is removed when sealing) therefore preserving the aroma for your pleasure when you open it. As you open the can air rushes in forcing the aroma to "gush" out at you.

put it in the freezer or at least the fridge
then it stays fresher and smells better longer
only the beans can stay perfectly fresh
so if you have a grinder, you can grind fresh coffee beans
every time you want a cup

pressure push out the smell and after you have opened it once it will not be like that again because you dont have the same amount of pressure that has bilt up
