Favorites of my family and friends. All are ones I greatly enjoy preparing, and am willing to share the recipes for. I ahve starred the ones i think everyone should try at least once:

Lately I have been hooked on this recipe for chicken pecan fettuccine. I got the recipe from www.jtv.tv. They don't archive their recipes yet so you might have to email them for their specific recipe. Though I have it and I could forward it to you also. It is sooooooo easy. I have doctored it some and made it a little easier to make. You will get done making it and won't believe that you just made a homemade alfredo that good. And don't leave off the toasted pecans at the end, they are wonderful.

Mom used to make a steamed pudding with hard sauce and a lemon sauce. It was something I liked to eat at the holidays. But she's can't cook anymore and I don't know where the recipe is. She also made green Jello with shredded carrots, pineapple and cottage cheese in it. She frosted it with a mixture of sour cream and mayonnaise. Sometimes a sprinkling of nuts. I do miss mom's cooking for the holidays. Darn! Why did you have to bring it up? Now I'm all melancholy.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

here's a great recipe for you:
CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

chilly mac is one of my favorite dishes to cook,
it is a simple recipe and takes 25-30minutes to cook:depending on how many people you are cooking for you will need red kidney beans in the can,ground beef or ground turkey is great too,tomato sauce and tomato paste(to thicken the sauce)shredded cheese,and elbow macaroni in the box also chili powder.First-brown the meat in a skillet then drain the fat(have the macaroni boiling at the same time)Next in a larger pot add the kidney beans tomato sauce and paste add the meat and the macaroni season to taste with the chili powder to give it the chili taste and any other seasoning that you like (be sure to taste as you go so it won't be too salty or spicy)allow all of the ingrediants to simmer top with the shredded cheese and you are good to go!

I make alot of home-made stir fry's because it is low in fat and carbs. But I do use rice.

Shrimp stir fry, just saute your green and red peppers, onions, carrot shavings, pea pods, mushrooms, squash (any veggies you like really) in olive oil, add your shrimp let simmer for about 35 mins on low. Add soy sauce if you like and pour over rice or eat alone. Without rice it is very low fat and low carbs. Also very easy.

I also have a chili recipe that i won a chili cook off too if you want the recipe it has like 17 ingredients in it.

I have several favorites: my grandma's broccoli casserole, Doritos Casserole, Chicken Enchiladas, Gooey Butter Cake, Banana Nut Bread, and my friends especially love my Honey Bun Cake.

Doritos Casserole:
10 oz. sour cream
1 can cream of chicken soup
1 can (20 oz.) cooked chicken
6 oz. chopped green chiles
1 bag (12 oz.) Doritos or Fritos
2 c. grated Mexican blend cheese

Preheat oven to 300°. In a saucepan, mix first 4 ingredients and heat. Spray a 9 x 9” baking dish with cooking spray. Place a layer of crushed Doritos/Fritos in bottom of pan. Pour ½ of heated mixture on top. Sprinkle ½ of cheese onto mixture in pan. Repeat. Bake for 20-30 minutes until hot and bubbly.

Honey Bun Cake:
1 yellow cake mix
3/4 c. oil
4 eggs
1 c. (8 oz) sour cream

Sugar mixture:
1 c. brown sugar
3 tsp. cinnamon

Icing:
2 c. 10xx sugar
4 T. milk
1 tsp. vanilla

Mix together 1 minute. Spread half in lightly greased 9x13" pan. Mix together 1 cup brown sugar and 3 teaspoons cinnamon. Sprinkle half on batter. Top with remaining batter. Sprinkle remaining sugar mixture on top and swirl with knife. Bake at 325 degrees for 40 minutes. Ice while warm.

mine is a baked boneless chicken breast. I let the chicken thaw completely . and then I sprinkle some meat tenderizer on one side . let set a hour or so . sprinkle on some garlic powder & some lemon pepper . ( no salt) then I add some steak seasoning . place in a shallow bread pan oiled with pam place in oven at 350 to 400 degrees until inside temp reaches 125 to 150 degrees. it come's out so tender
