i've been working on this all my cooking life..first you have to get the oven hot and put your crisco in the pan and put the pan in the oven to melt the crisco and get the pan hot..take it out before it burn but while it is in there make your batter..just use any corn meal mix..and don't over bake it . unfortunately corn bread is crumbly by nature but the hot pan will sear the bottom and sides and keep it as moist as possible.

My family loves this moist and flavorful cornbread. It's delicious with gumbo, beans or chili, or a hearty stew.
INGREDIENTS:
1 1/2 cups cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
1 scant teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1 can (approx. 15 ounces) cream-style corn
3 eggs
6 tablespoons butter, melted
PREPARATION:
Combine dry ingredients in a large mixing bowl. Whisk together the remaining ingredients. Combine mixtures, stirring until all ingredients are moistened. Spread in a greased and floured 9-inch baking pan.
Bake at 375° for 35 to 40 minutes

I always use the package of Jiffy cornbread. It's very inexpensive and tasty. I also squeeze a little honey into the batter, don't mix too much and it comes out moist and sweet.

Favorite Corn Bread
INGREDIENTS:
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
4 teaspoons baking powder 3/4 teaspoon salt
1 cup milk
2 eggs
1/4 cup shortening
DIRECTIONS:
1. In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt. Add the milk, eggs and shortening; beat for 1 minute. Pour into a greased 9-in. square baking pan. Bake at 425 degrees F for 20-25 minutes or until bread is golden brown and tests done.

I use the recipe from Albers, but instead of greasing a round cake pan, I butter a skillet and bake it in the skillet.

use bacon grease,instead of oil -butter-milk instead of water -and try a little bit of anything you like -like - bell pepper,onion,garlic,cheese,---you can bake or even stove top cook with anything in the mix for more -moist and tasty bread !! no recipe adjustment either !!

I always add a little sugar and melted butter. Don't beat the batter too much. Lumps are allowed to be in the batter.
