Use leftover mashed potatoes from Thanksgiving dinner to make these delicious, crisp potato patties.
INGREDIENTS:
2 cups mashed potatoes
1 egg, beaten
1 onion, minced
1/4 tsp. salt
1/8 tsp. white pepper
2-3 Tbsp. olive oil
PREPARATION:
Mix together mashed potatoes, beaten egg and onion in a medium bowl. Add salt and pepper and stir.
Over medium heat, heat olive oil in a medium size nonstick frying pan. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 4 inch circles that are 1/2" thick.
Cook until bottom is browned and crisp, about 3-4 minutes. Carefully turn the patty over and cook the second side until brown and crisp, 3-4 minutes. Serve with ketchup or salsa.

Potato Soup
Thin the potatoes to soup consistency with milk and a little sour cream. Add come sliced green onion and salt and pepper to taste.
Mash and Cabbage
Saute thinly sliced cabbage in butter, add the mashed potaoes, and salt and pepper to taste. This might sound odd but it is tasty.

INGREDIENTS
4 cups mashed potatoes
2 eggs
2 tablespoons dried parsley
1/2 cup grated Romano cheese
salt and pepper to taste
2 tablespoons imitation bacon bits
1 teaspoon dried onion flakes
1 cup Italian-style dried bread crumbs
1 quart vegetable oil for deep frying
DIRECTIONS
In a large bowl, combine mashed potatoes, eggs, parsley, cheese, salt and pepper, bacon bits and onion flakes. Form mixture into patties, and dredge patties in the bread crumbs.
Pour oil 1/2 inch deep in a large, heavy skillet. Heat oil over medium-high heat. Fry patties, flipping to fry them on both sides, until they are golden brown. Serve hot.

I have a good recipe for mash potato candy.
Take 2 cups cold mash potato's 4cups powder sugar 4 cups coconut mix well form into balls and dip in dipping chocolate.
Tastes like MOUNDS candy bars you can add 1/2 cup chopped almonds to mixture before you dip them

Shepards Pie!!
SHEPHERDS PIE (POOR MANS PIE)
1 lb. ground beef
1 can peas
1 can sweet corn
1 medium onion, diced
1/3 c. sugar
8 medium potatoes or leftover mashed potatoes
2 c. shredded sharp cheddar cheese
Boil potatoes, mash and season to taste with milk and butter.
Brown ground beef and onion with salt and pepper. When cooked, add peas, corn, sugar. Let simmer until heated through.
In 13x9 pan place meat and vegetable mixture in bottom of pan. Cover with mashed potatoes and sprinkle cheese on top.
Place in oven on BROIL until cheese is bubbly or light brown

Make some thin steak, cut into pieces and cook for a long time in tomato sauce and onions until meat just falls apart. Put on top of potatoes and eat. My mom makes this all the time, and it is sooo good.

I once made the mashed potato bowl from KFC with my own ingredients. Heck, I liked my version of the dish better than the one from KFC. That is about all I can offer except warming them up and eating them.

Potato Spinach Balls
Yield: 2 Dozen Two spinach balls per serving
4 Idaho Potatoes, peeled, boiled and mashed
1 10-ounce package frozen chopped spinach, thawed and well-drained
2 eggs
1/4 tsp. nutmeg
1/4 tsp. cayenne pepper
1 cup grated pepper jack cheese
1/2 cup flour
salt and pepper to taste
cooking spray
Lightly brush a baking tray with vegetable oil or cooking spray. Set aside.
In a medium bowl, combine the potatoes, spinach and eggs. Beat with mixer until well-blended. Season with nutmeg and cayenne pepper. Add the cheese and 4 tablespoons of the flour. Stir until flour is well-blended. Spread the remaining flour onto a glass plate and season with salt and pepper.
Using two teaspoons, form the spinach mixture into 1-inch balls. Drop the spinach balls onto the flour-covered plate. Roll balls in the flour to coat and place on the prepared baking sheet. Place the tray in the refrigerator for 20 minutes before baking.
Preheat oven to 450° F. Remove balls from the refrigerator; spray them lightly with cooking spray. Bake for 12 to 14 minutes or until golden brown and firm to the touch. serve plain, or sprinkle balls with lemon juice.
