I don't like fish. I know dark green leafy veggies are good, and nuts and seeds. I would like a good idea for how to make a snack, or a good recipe with black beans, spinach, and so on.

Any good bean soup recipe would be a start, and stir in a bag of chopped spinach about 20 minutes before you serve it.

Peanut butter and banana sandwiches on whole grain (really whole grain!) bread would work too.

Check out the web address below for lots of good info on magnesium.

All though some foods are higher in Magnesium then others... not all are easily absorbed. The two highest easily absorbed magnesium rich foods are Swiss Chard and spinach.... I'd eat raw or lightly blanched. A Salad with both and some dried cherries, walnuts and grilled chicken or tofu (magnesium) with nice dressing would be a nice choice.
I've also just been advised to take more magnesium and was recomended a Cal- Mag suppliment in the refridgerator aisle at a whole foods/ health foods store.
