I keep them in a bowl of water.
I know lemon/lime juice on apples keeps them from turning brown but I haven't tried that yet on potatoes...plus who wants lime-flavored potatoes?

Place in a bowl of water and add a little of lemon the acidtity of the lemon will keep the potatoes from tuning brown.

Add some cold water and cover them with foil or glad wrap. Make sure the water covers all the potatoes though!!!

I'm thinking if you soak the cut potatoes in water it will keep them ok. I usually peel potatoes and leave the ones i'm done with in a big bowl of water... i'm not sure about overnight though???

keep them covered in a bowl of water until ready to use...make sure all of the potatoes are covered in water or the part that isn't covered will turn brown..

If you add about 1 table spoon salt to a big bowl of water, this will keep them from turn colors.

Add lemon juice to the water. I still wouldn't slice them,tho. Just peel them and slice them tomorrow.

positioned them in a bowl lined with chilly water. confirm they are completely submerged. be conscious, although, that starch will leech out once you carry potatoes this way, so if the starch is important to the recipe you need to make modifications.
