I'd use the cook's. Cheap wines certainly do increase the chance of bad hangovers and headaches, so drink in moderation.

And the plural of mimosa is mimosas, not mimosa's.

Asti Spumante is very sweet. If your going to make a mimosa I would go with the Cooks. Cooks is the best of the low end Sparkling Wines. It can not be called Champagne if it doesn't come from the Champagne Region of France.

Since the Mimosa is a mix of champagne and orange juice the cheaper champagne wont hurt your head so much. Cheap or not is a matter of personal preference. Just make sure that it's served cold. in a nice glass and have a few nibbles or munchies around and you should be fine. The hangover comes from over indulgance.

Asti is too sweet for Mimosa's.
Generally Mimosa's are orange juice and champagne (sparkling white wine).
But I had them with Passion Fruit nectar in Hawaii and they were phenomonal and would be a bit nicer without adding alot to the cost. You could also use Papaya or Mango nectar.

There is no such thing as "Asti champagne", you mean spumante.

Of the two the Cooks will mix better but will lose its effervescence rather quickly.

My suggestion is to spend (just) a few bucks for a Spanish Cava, also a "methode traditionelle" (made like real Champagne) sparkling wine, which due to the grapes used for it is in my judgement better for mixing with orange and other fruit juices.

I find orange juice, particularly the frozen concentrates, to be very bitter. I prefer to make my mimosas with a sec champagne, not the brut champagne (most on market are brut (very dry). So, I would choose the asti.

Not Necessarily. What he said is true; weddings are expensive. My daughter and future son -in-law are also getting married. His mother came up with an idea: they plan to get married now (even if you have to go to City Hall) and when you have been married 5 years, have your own wedding. It gives you time to save up the money towards it. I got pregnant at 26 and by the time I had my only daughter, I was 27. It depends upon the couple themselves. You two should get engaged now. If you want a special kind of wedding, I think you will be okay. Congratulations on wanting to get married.
