I see by the list of answers that Granny Smith is a popular choice, However I'll recommend my personal favourite, Northern Spy. Here's why ... it's a dense flesh apple, greenish-yellow when ripe, that keeps it's texture or firmness during baking. It's on the sour side if eaten plain which is another reason why it does well in a pie with added sugar. Here's my recommended list in order of preference ... Northern Spy, Pippin, Cortland, Ida Red. I've used all of these but Pippins (not available near me) and I have baked many an apple pie.

Granny Smith or Pippin -- a tart, firm, crisp green apple. You want the acid balance to counteract the sugar (and cinnamon, mmmmm) in the pie filling.

I like them peeled and cut into thin slices, but they're okay peeled and cut in large chunks as well.

For an extra treat, toss in a handful (say a cup) of blackberries into your apple pie filling. We did this once out of necessity -- didn't have enough apples or enough blackberries for a whole pie, so we put them together. Wow!

Any apple that is crisp and tart would be good for pies or cobblers. Granny Smith is good, but try Pink Lady too. Or, if you are feeling kind of saucy, go for many different varieties all at the same time. Experimenting is always fun. Just stay away from non crispy apples.

Granny Smith apples. They are tart enough and they keep their shape. You can also use golden delicious apples. They make good pies also.
