Seattle Caramel Apples
Submitted by: Allrecipes.com Staff
Rated: 4 out of 5 by 2 members Yields: 6 servings
"Trail mix adds a nutty texture to these delicious caramel apples."
INGREDIENTS:
6 Granny Smith apples
6 wooden sticks
1 (14 ounce) package
individually wrapped caramels,
unwrapped 2 tablespoons water
1/2 teaspoon vanilla extract
3 cups trail mix
1 cup semisweet chocolate
chips
DIRECTIONS:
1. Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
2. Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan.
3. Spread the trail mix out on a dinner plate. Roll the apples in the mixture to coat. Place on the aluminum foil and chill.
4. Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.

My mom has a recipe for carmel which is very basic... Buy a can of Carnation sweetened condensed milk, peel off the label, drop can in pot of boiling water, boil for 60 min, drain water, let can cool completely, open can and use carmel.... this is great to have onhand around the holidays already cooked. Just don't forget what's in the can with no label! (I know this works!)

"Caramel Apples"
1) Wash 4 or 5 medium apples and dry thoroughly. Remove stem and blossom end of each.
2) In top of double boiler over hot water, heat 1 (14 oz.) package caramel candies, 1/2 teaspoon salt and 2 tablespoons water, stirring frequently, until caramels are melted and mixture is smooth.
3) Keeping sauce over hot water, place each apple in hot caramel sauce; spoon sauce over apple until it's completely coated. Insert wooden skewer in stem end; remove from sauce and place on waxed paper. Chill until caramel coating is firm.

in a glass bowl add a package of Kraft caramels. ( unwrapped) add 2 tablespoons of milk and heat slowly and stir often until melted. Dip your apples and then sit on wax paper or parchment to dry. I like to roll mine in nuts after the caramel for a crunch. If you dont add the milk, these caramels will just be a big bunch of goo.

ULTIMATE CARAMEL APPLES
INGREDIENTS:
1 cup water
1 cup sugar
1/2 cup heavy cream
10-inch square piece of Styrofoam
6 Popsicle sticks or small wooden dowels
6 Red Delicious or Golden Delicious apples
3 ounces white chocolate
3 ounces semi-sweet chocolate, finely chopped
1/4 cup chopped nuts
DIRECTIONS:
In heavy-bottomed saucepan, combine water and sugar. Over
low heat, stir mixture gently until sugar is completely
dissolved. Increase heat to medium low and cook, without
stirring, until mixture is a dark amber color. Remove from
heat and carefully stir in heavy cream (mixture will bubble
up and spatter a bit, then subside.) Set aside to cool and
thicken. Cover Styrofoam with waxed paper to catch caramel
drippings (this will be a stand for caramel apples). Insert
Popsicle sticks into bottom center of apples. Dip top half
of each apple into thickened caramel. Insert bottom of Popsicle
sticks into Styrofoam, allowing apples to stand upright so
caramel runs down sides of each apple. Refrigerate to harden.
Meanwhile, melt white chocolate in top of double boiler above
gently simmering water; stir until smooth. Transfer melted
chocolate to pastry bag fitted with small writing tip. Drizzle
thin, random strips of white chocolate over each caramel apple.
Repeat melting and drizzling with semi-sweet chocolate.
Sprinkle with chopped nuts.
YIELD: 6 Servings
