An organization is (hopefully) much larger than the committee that might break into even smaller sub-committees to handle specific projects.

Organizations can be nationwide or world wide with thousands, even millions of members. The organization would select a specific small number of people to form the committee that governs the entire organization.

An organization is like the Parent Teacher's Association. A committee is a group of people in the organization, willing to work on a project.
Fund raising, carnivals, homecoming, flea markets, trips are projects that all need a committee chairperson and other volunteers to do work such as set up, work the event, clean up etc.

Usually when you are referring to an Organization you are referring to the business as a whole. When you refer to a committee you are referring to the people within that committee.
