They keep for a long time, just like potatoes in a cool dry place. When they rot it will start as a discolored soft spot usually on one side. Once cut into a jack o lantern it's life is determined by the weather. The candle speeds up the process.

LMAO what do you mean until it goes off?!? Are you asking about how long a candle will burn inside of a pumpkin?!? Well, the larger the candle the longer it will burn obviously also if its windy that can cause it to burn out then of course will have to be relit! The way you can tell if the candle has burnt out is when you look at the front of the carved face you will no longer see the candle burning inside!

What do you mean by "goes off"? Goes bad? Before carving, a month or so, until its soft and little flys, after carving, a week tops.

if starts to get soft
like most living things, bacteria starts to eat it up from the inside out and it gets soft
when this happens it is not long before it really starts to smell and needs to be thrown out
good luck

once scraped out and carved beautifully (or not) the pumpkin will deteriorate...sagging gently over a week or so.. getting softer and softer and smellier and smellier!!
I suggest you throw before it grows mould !

maybe a week and some change depends on how ripe it is and if you have cut it or not. if it is soft or smells than chances are its already gone bad

They last a while... A month at least.
And they get soft and start collapsing on themselves.
