Is it true you have to take a day of rest or is it okay for me to hit the gym everyday?

Well, what's your goal? If you are trying to lose weight then 3 - 5 days a week is suggested (I typically go for 5 or 6, burn more calories).

If you just want to maintain your weight, then 3 is probably sufficient if you aren't over indulging a lot.

I try to exercise every day. Once in a while I'll take a day off. I find that I if I don't exercise, I don't sleep well at night.

Regularly so that you stay in shape....otherwise if you let yourself get out of shape it is harder to get in shape rather than stay in shape. But the frequency depends on how well you want to stay in shape as well as the time that can be allocated to exercising cause sometimes its not impossible to make time.
