I am always overly worried that I am going to have under-cooked chicken, so I overcompensate by cooking the chicken too long. How long, on average, should the chicken cook on each side?

Also, should I keep flipping it over back and forth, or let it cook fully on one side and then flip it over?

(And you can include recipe ideas if you want!)

in the frying pan I put a tablespoon of olive oil and a pat of butter.

Salt and pepper the chicken (also feel free to add any other flavoring you want) and put in in the pan. I cook it on side 1 for about 5 or 6 minutes then flip it over for another 4. With the heat on medium this works for my stove. (oh, I only flip things once - at least I try.)

a quick way to tell is to stick a knife in the thickest part of the breast, if the juice runs clear it is done - if any other color comes out (even the very slightest pink) go for another minute.

you can add chicken or vegetable stock or plain water to the pan in small amounts and/or put the lid on the pan while it cooks (the condensation will help keep it moist).

I would think about seven minutes per side would do.

Here's a trick when cooking chicken breasts in the frying pan that will keep them from drying out. Add a little chicken broth or water with chicken bullion to the bottom of the pan (about a half-inch). It makes the chicken juicy and more flavorful. You can also add a quarter-cup of white wine and a pinch of seasoning.

How long? Well depends on the size of the chicken but an easy way to tell is if you cut it in the center and look it should be white. Also if you flip it over and over again it dries it out. To keep it juicy let it cook on the one side and then flip it!

Marinate the chicken in a salad dressing you like, then grill it or cook it in a pan. other: Place in a blender 1 egg, start it. Add olive oil in a thin stream until it gets white. Add salt and the juice of half a lemon. Spread over the chicken. Cover the chicken with ground bread and bake.

YOU USE
I USE ONLY CAST IRON FOR CHICKEN
MEDIUM HIGH HEAT
APPROX 7-8 MINUTES LEFT ALONE
THEN FLIP FOR THE SAME
I DONT TURN MINE OVER AND OVER BUT TO EACH HIS OWN
INJECTING CHICKEN BROTH INSIDE PRIOR TO COOKING OR SOME LIKE LEMON JUICE HELPS TO KEEP THEM MOIST INSIDE

Cut into the thickest part of the chicken. If its white all the way through...its done.

Grill it, dammit. Over mesquite. About 20 minutes. And season with Tony Chachere's Cajun seasoning.
