Not too crispy!!!! They always come out like potato chips.

Sounds like you oil's too hot. Make sure that the potatoes, after they're cut, are washed in a salted water and then drained and patted dry before they go for a swim.

Actually I'm a Yankee. We do fried potatoes with thin slices of raw potatoes in oil (or bacon fat), They're alittle like hash-browns but they're sliced, not shredded. Once they begin to brown, you turn them over to brown the other side. Great with stewed tomatoes and pork chops. Season with Pepper and Salt while browning them.

Grew up in Texas and made them a lot. Very simple. All you need is:
Golden potatoes-washed, keep skin on.
Chop into long strips(not McDonalds size, about 3x that big)
Deep fry in oil until golden brown, not dark brown. This only takes a few minutes. Take them out, drain on paper towels. Sprinkle with seasoned salt or garlic powder, salt, and pepper.

I k now southerners that eat both. Like me I'm a southerner. Although... some places don't have clams around here I don't think.

The recipe, fried in a pan w/ oil, salt and pepper sounds like "french fries" to me. I don't get this name
