Wines by the glass that don't suck. Menu items that don't come out of a deep fryer. Real variety in beer choices, not same beer different producer. For example one pub up here has all of the following on tap as their dark beers: Pipers Pale Ale, Granville Island Pale Ale, Okanagan Springs Pale Ale.
Guinness ON TAP. A Porter.
Good service, friendly staff, proper lighting. I hate places that are as bright as a classroom.

I would like a bar where the owner doesn't harass the patrons into giving the bartender a tip. We have a problem with that here. The man charges $8 for a Bud and then wants us to tip the bartender! The place is not a fancy one either. I
So, cheap beer, a good bartender and a clean place.

Liquor variety-so many bars I go to only have bottom shelf or middle of the road liquor. Ocassionally, I will go somewhere that has only top and bottom, nothing really in between. You want to cover all of your bases and offer one low-end, one or two high-end and lots of varieties in between.
Also a bartender that knows how to make ANY drink. A lot of places just have their bartenders learn like ten drinks and then serve three to five types of beer. Do ten different types of drinks make everyone happy? No! So have your bartenders learn the Martinis, Manhattans and the Cosmopolitans all the way down to your basics and brews and you've got a bar that will please people.

I live in NYC and I'm soooo tired of pretentious places. All of the bars that are nice enough to go and have a few drinks at are so "fake". A simply decorated neighborhood place with comfy couches, good drinks and great bar food would be my home away from home!

a nice selection of craft brews on tap reflecting your support for local small businesses. a good collection of whiskies. don't play the music too loud; I go to my local watering hole for conversation. it would be nice if a bar in North America had the courage not to surround the clientele with televisions; I find that practice irritating. go for a nice ambience. a patio is great in summertime, especially if it's situated so that patrons can watch the world go by.

Soft lighting, comfortable stools (make sure you have that brass rail for the patrons' feet!!), knowledgeable, friendly bartenders who know a single malt from a bourbon & who are older than 18, broad selection of music @ a comfortable level, plenty of interesting items such as memorabilia, game cards, etc. as good conversation starters. Wide selection of tap beers, wines, fine whiskeys... and the appropriate glasses for each.

ps. If you have a good tap selection, lots of people like joining "mug clubs."

I'd put in a jukebox that only plays country music, sawdust on the floor, western decorations on the wall, a huge poster of John Wayne, a very large assortment of alcoholic drinks but no "pansy" or "city folk" drinks, a large stage with chicken wire in front of it. Not a whole lot of lighting.
But if your not into that, put a stage for karaoke, make it smoke free, comfy chairs/stools, if it isn't smoke free make sure it have VERY good ventilation. plenty of room to walk around if it gets packed (which for your sake I hope it does!), TVs in every corner. Large variety of drinks, talkative bartenders. Pool tables, dart boards...and a good kitchen with good food.

Sports, Big screens, Lots of cold beer flowing, delicious hot and BBQ wings, pool tables and you cant forget Golden Tee, SilverStrike Bowling, and Big Buck Hunter... Sorry i could go on and on and on to create a dream bar, but those are me and my friends favorites...

Depending on location, you need to pay attention to your customer's request....serve a variety of beer and liquor that cater to your locals and don't be affraid to bring in something new.
And a good bartender is a must!
