Machine Made Corn Bread
1-1/2 cups water
2 teaspoons salt
2 tablespoons margarine
1/3 cup sugar
1/2 cup dry milk powder
1 cup yellow cornmeal
3-1/2 cups bread flour or all purpose flour
2 teaspoons active dry yeast
Measure the ingredients into the bread pan in the order listed. Make a well in the flour and sprinkle the yeast into it. Set the machine to it's Basic Cycle. On my machine this lasts for 3 hours. Press Start, and let the machine work it's magic. Remove the cooked bread from the pan after baking and allow it to cool before slicing.
Folks who prefer their cornbread sweet, will love this recipe. Hearty enough to accompany spicy foods like Chili, this bread is still refined enough to serve to the Preacher and his wife when they come for Saturday night Supper. My boys love this bread with meals, although they don't always like it for sandwiches. Personally, I think it makes fine sandwiches, serving especially well as a base for Sloppy Joes.

I can't think of any reason why bread would come out with a crust that hard to cut. Is there a setting for the size of loaf? That might change how long it bakes for. Is it possible that what you really need is a better bread knife? Also remember that slicing very fresh bread is sometimes like you describe, because the inside is still very soft. It will cut better if you don't try to cut it until it's been at room temperature for at least a couple of hours. The crust will soften a bit(particularly if you cover the loaf) and the inside will firm up a bit. If the bread machine just doesn't work out, you might want to have a look at the "Artisan Bread in 5 Minutes a Day" method. I've used it and it works. They have a website, but you have to buy the book to get all the details on the method and the recipes. It might work better for you, if you're trying to bake all the bread for a family, than producing only one loaf at a time by machine.

GIve it a try, but beware that what you'll end up with is a fragile loaf of corn bread. There are recipes for making in a bread machine, if making it from scratch- but it doesn't taste nor come out the same as making from a box of corn meal and baking it in the oven.

No - Corn Muffin Mix is not a yeast bread. It leavens in the oven from baking powder in the mix.

all of the answers so far are in of them selves correct, just make the bread from scratch with a spoon and bowl and metal baking pan thats well greased by the time you read all of these blogs you could have eaten the finised loaves.
