Here's 2 ideas for you. Both simple and good.....


Southwestern Skillet Bake

Sensational Southwest flavors and one pan make tonight's dinner easy on the cook!


Prep Time:15 min
Start to Finish:35 min
Makes:6 servings

Southwestern Skillet Bake

1 pound lean (at least 80%) ground beef
1 jar (16 ounces) Old El Paso® Thick 'n Chunky salsa
1 can (11 ounces) Green Giant® whole kernel corn, drained
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 cup Original Bisquick® mix
3 eggs


1. Heat oven to 400ºF. Cook beef in 10-inch ovenproof skillet over medium-high heat 5 to 8 minutes, stirring occasionally, until brown; drain. Stir in salsa and corn; heat over medium-high heat until hot.
2. Reserve 2 tablespoons of the cheese. Stir Bisquick mix, eggs and remaining cheese in medium bowl until blended. Spoon batter around edge of beef mixture, leaving center uncovered. Sprinkle with reserved cheese.
3. Bake uncovered about 20 minutes or until golden brown and toothpick inserted in topping comes out clean.


Substitution
Use Green Giant® Mexicorn® whole kernel corn with red and green peppers instead of plain corn to add even more of a Southwest twist to this skillet bake.

Substitution
Don’t have Cheddar cheese? Use the same amount of another cheese you have on hand.

Helpful Note: I usually double the ground meat in this dish ---

Makes:6 servings

Beef Cassoulet with Herb Dumplings

1 pound lean ground beef
1 cup water
1 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
2 cloves garlic, finely chopped
1 medium celery stalk, thinly sliced (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 can (15 to 16 ounces) navy or kidney beans, drained
1 can (14 ounces) beef broth
2 cups Progresso® diced tomatoes (from 28-oz can), undrained
2 cups Original Bisquick® mix
2/3 cup milk
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried basil leaves


1. Cook beef in 4-quart Dutch oven over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
2. Stir water, 1 teaspoon oregano, 1/2 teaspoon basil, the garlic, celery, onion, beans, broth and tomatoes into beef. Heat to boiling; reduce heat.
3. Stir remaining ingredients until soft dough forms. Drop dough by 12 spoonfuls onto beef mixture (do not drop directly into liquid). Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.

Simplify
Save time, not to mention tears. Use prechopped onion found in bags in the freezer section of your grocery store.

Did You Know...
One medium clove of garlic, finely chopped, is the same as 1/4 teaspoon instant minced garlic. In this recipe, use 1/2 teaspoon instant minced garlic for the fresh.

this is coming from a 22 yr old that is just now realizing the fact she has to cook for the rest of her life so if i can whip up something interesting to me when i hate to cook this should help you.

two bags of spinach
one clove of garlic
two people eating? two chicken breast
onion powder
parsley
oil
two sweet potatoes/yams same thing
brown sugar
butter
OK so you cut the garlic first into little pieces put them on a heated pan add a table spoon of oil then add the washed spinach make sure you remove the stems from the spinach. the chicken i put on the George Foreman grill with seasoning and cooked through. mix the spinach until dark green. sweet potato is the added touch it brings all the flavors together, just put it in the microwave after poking holes in it. place the chicken on the plate cut into cubes spread the spinach and garlic on top of the chicken sweet potato on the side and wallah perfect dinner, healthy too. hope i helped

I am having chicken fried steak, mashed potatoes, cream gravy, and green beans seasoned with smoked bacon. For dessert, we are having an apple/pineapple "easy" cake (recipe below)

Apple Pineapple Crumble Cake


Ingredients:

Can (approx. 20 oz.) of Apple Pie Filling
Can (approx. 20 oz.) crushed pineapple
Small can coconut (3.5 oz.)
White or Yellow Cake Mix
2 sticks of margarine
Crushed pecans

Instructions:

In a lightly greased 9” x 11” pan, spread the apple pie filling in an even layer. Next, place the crushed pineapple (juice and all) as the next layer. Spread the coconut evenly over the two previous layers. Spread the dry cake mix (do not add anything to it at this point) as the next even layer. Melt 2 sticks of margarine in a sauce pan; pour and spread as evenly as possible on top of the cake mix layer. Finally, apply crushed pecans (approx. 1 cup or more to taste) to the top. Place in a preheated oven and bake at 350 degrees for 1 hour.

Chicken chow mein noodle casserole--Takes about 10 minutes to make
1 large can of campbells chicken rice soup and 1 large cream of chicken soup
2 cans of chunk chicken
1-5 oz can of la choy chow mein noodles
mix all of these in a large mixing bowl (do not add water to any of the soups) mix up-- spray a cake pan or bakeing dish with non-stick spray and pour it in -- Bake at 350 until it gets nice and bubbly on top THIS IS SOOOO GOOD!!

If you want quick and easy and still edible, run to the store and get a box of the shake n bake bbq flavor, some chicken breasts, a ready-make packet of mashed potatoes, and a steam-and-serve bag of veggies. I can cook this whole meal in thirty minutes w/ almost no work involved and everyone thinks you worked hard on it.
Or get some angel hair pasta, bottled sauce, and throw some precooked chicken into it. Easy.

We are having corn chowder and cheddar grilled cheese on rye

I also struggle with coming up with dinners - at www.allrecipe.com you can subscribe for six months for $14 and they will send you a week menu once a week with a grocery list. Most of the stuff has been pretty good - some weeks I switch something out - one week none of it sounded good but I was too tired, to lazy so I just printed out the grocery list and the family loved it!

I am making a quiche of sorts. I've got a pie crust made already, so I'll just roll it out, throw it in a pie plate and then add egg, soy milk (try it - is lighter tasting and quite good), cheddar cheese, canned, diced green chiles and chopped tomatoes. Some canned chili beans (no meat) and homemade spanish rice will round out the meal. I'll fry some flour tortillas and dust them with a sugar/cinnamon mixture and have with vanilla ice cream for dessert.
