I made a cheesecake as per a Delia Smith recipe and all was going well except it seems reluctant to set. I don't want to have to throw it all out and start again- is there anything I can do to it now to make it set better?

If you still need help, I'm not sure what time you will be getting this, but..... you can scoop out the cheese mixture, and then take a couple of packages of Knox unflavored gelatine and dissolve them with a few tablespoons of sour cream ( or milk or cream if you have no sour cream). Mix this into the cream cheese mixture. It might help. I use gelatine for all my puddings and custards and it sets them really well.

If you add one cup of cement mix which you can get from any good builders yard, it should do the trick. Just make sure nobody eating the cheesecake has false teeth.

I stick to one cheesecake only, and that is one my mum taught me how to make.
Crushed digestive biscuits and melted butter, stir together and put into a greased tin. Flatten down and refrigerate.
10oz double cream whipped, 500g cream cheese[philedelphia]. mix the two together, then pour onto biscuit base.
leave to set in fridge.
decorate with your own topping.

you have to throw it away, coz once u have done with the cooking part and it doesn't set, its not worth trying anymore. and next time u should mix sum gelatine in it, it helps more.

put it in to the fridge for an hour that should work.

best left overnight..do this and eat tomorrow..the flavour will be better as well.
