I prefer Oven-Fry myself if you're gonna use a premix.
Otherwise, bread crumbs, crunched saltines, cereal flakes, and your preferred seasonings all make good coating after dipping them in a beat egg.

But whatever I'm cooking (this goes for more than just fried chicken) I will turn the oven to broil, or highest heat, for the last 5-10 minutes to give a browned crisp.

Another Tip: Try to put your coated chicken in the pan on top of a rack. Then the juices pool under the chicken instead of the chicken sogging its breading in the juice. But you may want to cover the chicken so as not to get dry ..and increase cooking time.

Crispy Oven Chicken:

2 cups crushed cornflakes cereal
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1/2 teaspoon paprika
1/2 cup egg substitute
1/4 cup Dijon mustard
4 (4-ounce) boneless, skinless chicken breasts

Stir together first 5 ingredients.

Whisk together egg substitute and mustard until well blended. Coat all sides of chicken with egg mixture, and dredge in cornflakes mixture. Arrange chicken on a lightly greased wire rack on a baking sheet.

Bake at 350° for 20 to 25 minutes or until chicken is done.

Yield: Makes 4 servings

Just take your chicken, put it in a roasting dish, preheat the oven to 220 C, pop your chicken in for 15-20 minutes, then take it out and turn the oven down to 160-170 C. Get a good slice of butter, and spear it on the end of a knife or fork, and rub it all over the exposed skin of the chicken so it melts into it and covers it completely. Put your chicken back in, and slow-roast, basting every half-hour or so. The butter will make the skin crispy and buttery and delicious, and will also bring out the natural juices, so as you baste the chicken and it sits in its juices, the meat will be really tender and moist. Yummy yum yum! Enjoy!!

8 boneless skinless thighs
paprika
salt
garlic powder
cups flour
1/4 cup butter or marg.

Set oven to 425.

Put butter in 9x13 inch oven baking dish and put in oven to melt while preparing chicken. Do not let it burn.

Season the chicken with the seasonings to taste. Coat chicken with flour and let sit a few moments. Place in pan with melted butter.

Bake for 40 mins turning the chicken after the first 20 mins.

Preheat the oven to 375 degrees. Lightly spray a cookie sheet with no-stick
spray. Set the cookie sheet aside. To coat the chicken, first roll the
pieces or breast halves in the flour to evenly cover all sides. Then dip the
chicken in the egg whites and roll in the cornflake crumbs. Place the coated
chicken pieces on the prepared cookie sheet. Bake for 45 to 55 minutes for
the chicken pieces or 20 to 30 minutes for the boneless breast halves, or
until tender and no longer pink. (Do not turn the chicken over during
baking.)

Buy some italian bread crumbs and some corn flakes (NOT the frosted kind)

grind up the cornflakes and mix with italian bread crumbs.

coat chicken in egg/water mix (2 eggs per half cup of water) and then bread with the bread crumb mix.

Bake in the oven and it'll come out crispy, crunchy and pre-packed with flavour. Add some garlic powder or onion powder to the crumbs if you like.

OK here's the absolutely easiest way and it taste great.
Ready take your cut up chicken and rinse all of it thoroughly and drain put a even amount of McCormicks seasoned salt all over it set on a broiler pan/ set oven on 350degress bake 45 minutes crispy delouisous chicken. Its awsome works real wel on just chicken drumbs.

"Oven-Fried Chicken" - 4 servings

2 1/2 to 3 lb. broiler-fryer chicken; cut up
1/4 cup shortening
1/4 cup butter or margarine
1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon pepper

Heat oven to 425*. Wash chicken and pat dry. In oven, melt shortening and butter in baking pan, 13x9x2". Mix flour, salt, paprika and pepper. Coat chicken pieces thoroughly with flour mixture.
Place chicken skin side down in melted shortening. Cook uncovered 30 minutes. Turn chicken; cook 30 minutes longer or until thickest pieces are fork-tender.

Crumb chicken legs-

chicken legs
@1 cup cheese-garlic croutons, finely crushed
1/2 c. parmesan
sprinkle basil
milk

Crush croutons, add 1/2 c. parmesan and basil and salt.
Dip chicken legs in milk and then into crumb-mixture and
place into Pam-sprayed pan. Bake until brown and no longer pink inside. 375 @ 45 min.

Chicken Fingers on a Stick-

4 boneless skinless chicken breast halves, pounded to 1/2-3/4 in thick
salt & pepper
24 (10in) bamboo skewers, soaked in water for 30 min.
3 TBS oil
2 TBS barbecue sauce
1 1/4 c bread crumbs

Cut each chicken piece lengthwise into 1/2 inch strips and sprinkle with s&p. Fold the strip slightly and weave them onto skewers. Prepare grill, close lid and heat until hot. In a small bowl, stir together the oil and the barbecue sauce. Spread the bread crumbs on a sheet of wax paper. Lightly brush the sauce mixture over the chicken strips and then roll them in bread crumbs. Grill until no longer pink inside, about 2-4 min. per side (on gas grill) Serve with the dipping sauce of your choice.
**I substitute oil and bbq sauce for spicy mustard or ranch dressing...yummy either way**

get bread crumbs.. shake n bake or any kind.. i prefer the italian bread crumbs. get some chicken breasts... and an egg or two.
Break eggs on a bowl, and pour out bread crumbs on plate. Place chicken breasts in egg and then onto the bread crumbs plate and cover w/ bread crumbs. then put in a non-stick baking pan & cook @ 350° until chicken is done.
