I usually do mine in the oven but my mom does her's in the slow cooker. She put's everything in the slowcooker (including the veggies) and lets it cook all day long. it doesn't get tough b/c all of the juice is still in the pot with it. I put roast thing in a casoroll dish and let it cook on 475 for about an hour and then turn it down to 425 and add the veggies. i let it cook like that till the roast is done usually about an hour.

I love the slow cooker. If you work first shift, start it up before you go to work and it will not only smell heavenly when you get home, but the meat will be so tender you'll barley have to chew! Add a packet of Lipton beefy onion soup mix and enough water to cover the meat and cover. I'd put it on a medium setting. The veggies can be added from the start but may get too soggy. Put them in an hour to an hour and a half before you plan to have dinner.
I would do the same thing for oven cooked except the veggies can go in right away and cook it for 4 hours at 350 degrees. I'd still add the beefy onion soup mix too! To top it off I'd make gravy from the juice left in the pan (or slow cooker) by adding corn starch or flour made into a rue first. Mmmmmm.
Have a great day and enjoy that roast...... by the way-- where do you live and what time's dinner? LOL

If you put it in the slow cooker it will probably take about 6-7 hours. If you do it in the oven @ 350 4 hours should be good. Add carrots, onions and potaotes, then open a can of beef gravy and pour it all over it and add one packet of dry onion soup. You can also add mushrooms, if you like. Just put it all in the dish or slow cooker with the roast. If you do it in the oven cover it for the first 2 hours or so then take the cover off and let it go. The best part about this meal is the hot roast beef sandwiches the next day (if you have any leftovers). Usually if I decide to have roast for dinner, i put it in the slow cooker before i leave for work and let it go all day, put the temp on low if you are going to do that and add a cup of water , when I get home dinner is ready. YUMMY GOOD LUCK!!

For a tender roast, more time the better at a lower temp. I cook mine at a temp of 275-300 degrees for 4-6 hours depending on your oven. I always use either a dutch oven (with lid) or a "turkey" bag. put 2 tbsp flour in the bag and shake, add veggies and then don't forget to season the roast with salt/pepper/garlic etc. So that your roast doesn't get dry, add a can of beef broth to the bottom of the bag or in the pot you are using. Put the roast in and for the finale, add a can of diced tomatoes on top of the roast. Adding the tomatoes breaks down the tendons of the roast making it VERY tender.

I always cook a three pound roast in the slow cooker now, rather than the oven. I put the roast in the slow cooker by 9 a.m. and add my carrots, potatoes and other vegetables. I take a packet of dry onion soup mix and then add two cans of cream of mushroom soup. I turn it on the high setting for three hours and then turn it down to the low setting for the remaining five hours. It turns out tender and delicious.

If you want to cook it in the oven it takes approximately two hours at 350 degrees.

The slowcooker you're looking at about 6 hours if you want it a little bit pink in the middle. Put in 1.5 cups of beef broth in the bottom of the slowcooker, with whatever vegetables you'd like with the roast. I'd start it all at the same time, as my veggies come out tasting amazing when i put them in at the same time - however I like my veggies almost like mush.. So if you like a little consistancy, put them in about an hour and a half in. ON the slowcooker, I don't know your temp settings, but about 400.

IN the over, put it in a roasting pan with 2- inches of liquid (I use beef broth) and allow to cook for an hour and a half. Then put the veggies in and flip the roast (to keep all sides moist)
Everything's done when the veggies are to your liking.

Slowcooker 6-8 hours...add beef broth, spices and all veggies in the beginning.
Oven 325 20-25min/per lb Use a covered pan or cover w/aluminum foil so it does not dry out. Add beef broth, spices and veggies before putting it in the oven. Keep checking to make sure the liquid does not run out..should keep atleast 1/2 at all times and baste the roast now and then:)
Good luck

I like cooking both ways if you get roasting bags (like people do turkeys) you can put the roast, veggies & spices & liquid in the bag & bake according to directions on bag the cooking instructions should be also on the bag. the crock pot you can add meat & veggies & liquid & spices, & cook on low for about 8 hours

Which ever method, it helps if you can brown the outside first. If not, don't sweat it, it just comes out a bit tastier. A variation on the onion soup/mushroom soup, just use the dry onion soup, a heaping tablespoon of tomato paste, some Worchestershire sauce and a dab of wine, beef stock, whatever.

use the slow cooker. i add veggies at the beginning. it will take a few hours on high or all day on low. low makes the roast more tender.
