I have made pumpkin pies from scratch on numerous occasions. Get your pumpkin and cut in half and scoop all the pulp and seeds out (if you like seeds clean and bake with salt). I then boil (like a squash) the rest (oh don't forget to wash). When it becomes soft like a potato take off stove and cool slightly and then peel of the out skin and put in a big bowl. I use a blender but a food processor will work great. Once that is done than you can put in all your other ingredients

It's the rind portion of the pumpkin. Scoop out the gooey, stringy guts part, and peel off the dark orange skin part, and the thick, yellow-orange portion that remains is what pie is made from. It is usually baked or boiled until soft, then pureed.

cut off top clean out seeds and "guts" from inside boil the rest thats the part in pumkin pie

im not sure, i think its the inside, not the seeds and stuff, but the fleshy part... well, if you cut it up, it would be like where the white part of watermelon is maybe? if that makes any sense? heh sorry if it doesnt
