Malaysia Airlines and Singapore Airlines are good... Business class for both is fantastic (Malaysia have just upgraded all of their 747's Golden Club Class cabins!) If going to the states, British Airways are good and Virgin used to be but I think their standards have dropped somewhat over the last few years. I too strongly recommend avoiding Air France.

It will depend where you're going. The Asian / Middle Eastern Airlines tend to be the best, and they're usually better value for money than European carriers.
Try:
Malaysia Airlines
Singapore Airlines
Emirates
Qatar
Cathay Pacific
You'll also want to consider seat pitch as well as service. On long haul, the more leg room, the better. The best for this and with good service are:
Malaysia Airlines
Thai Airways
Air New Zealand
Qatar
They all have 34" seat pitch.

At the moment I believe Qatar Airways, Cathay Pacific and Singapore Airlines are the only 5* rated carriers. Personally I rate Emirates and BA highly and give a very big thumbs down to Malaysia Airlines.

It completely depends where you are travelling to, for example if you're going to Orlando with a family, then Virgin. if you are going to Dubai, then Emirates (as they have best in flight entertainment called ICE) also depends where you are flying from, if you are flying from Manchester to Australia, then Emirates or Singapore Airlines become the best options as you do not need to go via london. Personally the best service I have received is with Contiental on flights between Manchester and Newark, Both Business class and Economy are the best I've experienced, but I am yet to experience Virgins Upper Class.

Perhaps you should read about them more, you get more about the company. I had good experience with Singapore Airlines.But you need to know which airlines u have from the airport for good choice. Check the site below for help

Recently went to Amsterdam with KLM and I found them awesome. The service was attentive, with hot towels and refreshments served often. The food was awesome, served hot and too much of it ( yes friends, too much, can you believe it ?), We even got Ben & Jerry ice cream in mid-flight, between supper and late night snack. Wine, spirits and beer are still free and a snack table is set up at all times in the back.
Entertainment was varied and their movie librairy is extensive.
Flew Cathy Pacific land British Airways as well this year, and they were nowhere near as good as the Dutch Airline!!

I travel a lot for work and pleasure. I don't think you can beat Virgin Atlantic for long haul. The service is great and the staff are very friendly and helpful.

I guess it depends upon where you want to go, but the best airline I have travelled on is Emirates. They have a choice of menu and have comfortable planes with good legroom.
