Does any one have a really good chili recipe??
Were having a chili back off at work, and I have never made it before…

This is the recipe that I use and we love it.

Chili

Road Meat Chili
World Champion 1991

Ingredients:

Phase I

3lbs. Beef
8 oz. Ground Pork
1 T. Flour
1 T. Wesson Oil
1/3 Cup Onions
1/2 T. Granulated Garlic
1 can Beef Stock
2 cans Chicken Stock
8 oz. can Hunts Tomato Sauce
1/2 T. Cumin
1-4 oz. can mild green chilies
1 Jalapeño Pepper
1 t. Black Pepper
3 T. Gebhardt Chili Powder

Phase 2

4 oz. Hunts Tomato Sauce
4 T. Gebhardt Chili Powder
2 T. Mild New Mexico Chili Powder
2 T. Cumin
1 t. Granulated Garlic
1 t. Tabasco
1/2 T. Brown Sugar

Instructions:
I - Saute meat in Hunts Wesson Oil, drain and add to a 4 quart cooking pot. Add all other ingredients and simmer covered 1-½ hours.

II - Uncover, add all ingredients in Phase II and simmer 45 minutes.

Ground Turkey Chili

Cook up one pound of ground turkey meat in a frying pan with a little olive oil. Add two bay leaves, some chili power and salt and pepper to taste.

While turkey is cooking, in a large sauce pan, heat up some olive oil (coat bottom of pan)... Add chopped onion and cook until translucent. Add cooked turkey/bay leaves.... Add more chili powder (don't be bash-full) and some chopped Jalapeno peppers.

Add some diced tomatoes (2 cans) and one can dark and one can light Kidney beans (note - rinse beans in a colander under cold water to get all syrup off - this reduces the gas issues that people from eating beans).

Let cook about 1/2 hour and taste to see if you should add more chili powder and or jalapeno. Simmer for about two hours.

Serve in a bowl with a dollop of sour cream. This also can be served as an appetizer by placing some chili in a oven proof glass or ceramic serving dish.... Sprinkle generously with Mexican style shredded cheese and heat until the cheese melts... Serve with taco chips (scoopable ones are the best!)

Here's mine, please know that I cook according to taste so the measurements for spices are estimated, use more or less according to your taste

I combine all of these ingredients in a slow cooker and let simmer at least 5-6 hours to get flavors melded together.

1 &1/2 lbs. ground beef browned in a skillet and drained well (note: Chuck, or 98% lean work equally well, some supermarkets have coarse meat especially for chili which will work too, but if not just plain ground beef/mince/chopped meat is just fine)

2 14 1/2 oz cans of light red kidney beans (when putting in slow cooker, don't drain, the liquid in the beans will cook in with the other ingredients and add flavor)

1 large onion (I prefer white) coarsely diced
2 cloves garlic minced

1 14 1/2 oz can of diced tomatoes (don't drain)
1 14 1/2 oz can of crushed tomatoes
2 tbsp chili powder (or you can use a pre-mixed chili packet from supermarket)

1 tsp cumin

1/2 tsp red pepper flake (optional)

1 cinnamon stick ( I know it seems weird, but it will add a really good flavor and gives a little kick)

salt and pepper to taste

Put all in slow cooker and let cook for a minimum of 5 hours, stirring and IMPORTANT tasting every hour or so, for adjusting salt (which get absorbed quickly) and pepper and more chili powder if neccessary.

Serve over rice if desired or by itself. Some good toppers are chopped onion, shredded cheddar cheese and a small dollop of sour cream....

Cowboy Chili

Chunks of tender beef and beans in a hearty tomato chili

Cooking Technique:Boil-Simmer
Prep Time:30
Cooking Time:20-30 minutes
Yield:7 servings (1 cup each)





Ingredients


1 pound beef top sirloin steak, cut into small, bite-size pieces
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon Wesson® Pure Vegetable Oil
1/2 large onion, chopped (about 1 cup)
1 teaspoon finely chopped garlic
1 can (15 ounces) Ranch Style® Original Texas Beans
1 can (14.5 ounce) Hunt's® Diced Tomatoes in Juice, undrained
1 can (10 ounces) Ro*Tel® Original Diced Tomatoes and Green Chilies, undrained
1 can (6 ounces) Hunt's® Tomato Paste
1 teaspoon Gebhardt® Chili Powder
1 teaspoon granulated sugar
1/4 teaspoon ground red pepper
Optional toppings: sliced green onions, sour cream, shredded Cheddar cheese, crushed corn chips









Directions



Sprinkle steak pieces evenly with salt and pepper.
Heat oil in 6-quart saucepan over medium-high heat 1 minute. Add steak pieces, onion and garlic. Cook 5 minutes, or until steak is browned on all sides and onion is tender, stirring frequently.
Add remaining ingredients; blend well. Bring to a boil. Reduce heat to low; simmer, uncovered, 10 minutes, stirring occasionally. Serve with optional toppings, if desired.

I have found the best chili is the easiest. I personnally use 1 pound hamburger meat ( or any ground meat you preferr). then about 2 cans of chili beans( dont drain), 2 cans dark kidney beans(drained), 2 can tomato sauce.2 cans of water( the best is to use the tomato sauce cans). then if you want to, i use the chili mixes at the grocery store. they have all different kinds that you can chose, if you dont like it firiery hot then get the mild. if it doesnt taste right to you. then add as much chili power you preferr and salt( try not to put too much, the beans add salty taste as well) and black pepper. i hope that you like it. i make it all the time. thats the easiest recipe i can think of. let me know how it goes.

I made this for my chili cookoff at work and won 2nd place

White Chicken Chili

1 lb boneless skinless chicken tenderloins
1 medium onion chopped
1/2 cup chopped jalapeno peppers
1 small can green chiles chopped
1/2 red or green pepper chopped
1 tbsp of dried minced or chopped fresh garlic
1 tbsp of cumin
1 tbsp crushed red pepper flakes
1 can white beans undrained(Northern or Canelli)
1 packet McCormicks White Chicken Chili season
1 1/2 cups of water


Season chicken with cumin and crushed red pepper flakes. Dice up the chicken tenderloins and brown in vegetable oil about 5-7 minutes with chopped onion and green/red pepper in a pasta pot. Add can of beans, McCormicks seasoning, chopped jalapeno peppers, green chiles and water. Stir all ingredients and cover. Simmer on low about 15-20 minutes

I double this for the cookoff

Take a can of chopped tomatos, about 500 ml. Add a little vegetable broth, fresh chopped cilantro and 1 tablespoon of olive oil. Next, add 1 cup drained black beans and 1/2 cup drained pinto beans. Let simmer for a few minutes on medium heat in a saucepan. Next, saute a little onion and green pepper in 1/2 tablespoon of olive oil. 1/2 onion and one green pepper will do. Add 1 or 2 teaspoons of chilli powder along with a pinch of cumin and a pinch of paprika. Mix into chili. Add some cornstarch to thicken if desired.

Do not add carrots or mushrooms. They take away from the flavour. Also, unless you like it really spicy, do not add red chillis or habanero chillies. To up the ante, try sweet green chillis or green jalapenos.

my husband loves this....

2 packages taco season mix
1 lb ground meat, cook and drain,
2 15 oz cans of kidney beans
1 can whole kernal corn
2 cans Rotel (the kind made for chilli)
1 small onion

Chop onion and put it in meat while browning, after draining, add everything else and let simmer. Hubby wants it once a week.... make some cornbread to go with it.

1lb sausage (browned and crumbled)
add 1c diced onion; cook until tender and sausage is no longer pink, drain drippings.
add and blend: 3-4 rounded tsp chili powder
1 rounded tsp cumin
3/4 tsp garlic
add and simmer: 15oz can tomato sauce
15oz can pinto beans including liquid
3/4 c water
heat for 25 minutes on medium-low simmer

You can garnish w/ shredded cheddar and chopped onion if you like.
