The Holy Days, being Sabbaths, are part of the Commandments ("keep holy the Sabbath day...").
Jesus fulfilled the prophets by fulfilling the prophecies of his first coming. Although I don't have a list of them, I've heard that there were a couple of hundred that Jesus fulfilled; and there will probably be a couple hundred more fulfilled at his second coming.
Jesus lived his life as an example to us of how to live Godly lives -- fulfilling the commandments, in spirit as well as letter, is the way that leads us to a better way of life, a fulfilling lifestyle.

Well, he claimed to be the promised Messiah. That would fulfill the prophets.
He teaches in Matthew 5-7 that a mere technical following of the law is not enough, we have to follow the "laws" set by God with the right intent - That fulfills the law.
Holy Days - I dunno. He never claimed that for Himself.

You must re-visit the Old Testament and read the prophesies. Isaiah and Daniel are two good ones. Daniel compares favorably with Revelations in the New Testament. There are numerous prophesies fullfilled. The Old Testament foretells and the New Testament fullfills.
