i would like to make pickled eggs but the shells dont come off clean the membrane seems to be too well attached these are fresh from my hens

It really makes no difference if the eggs are fresh or from a store, brown or white shelled, hard or soft boiled, or if you want to have the cooked eggs cold or eat them while still warm. If you "shock" them with cold water for 30 secs or more, then the eggs usually peel easily. Another trick is to peel the cooked eggs with a teaspoon NOT your fingers. Dip the teaspoon in water, tap the spoon against the egg to crack the shell and slip the spoon inside. Much faster, cleaner, and easier.

You are boiling them too long. Put the eggs in cold water, once the water boils let them boil only for 5 to 7 minutes, then shut the water off and leave them in an additional 3 to 4 minutes. Shells should come right off.

The easiest to peel eggs are older eggs. The eggs we buy at the grocery store are about 2mos. old. I would just leave them in the fridge for a couple weeks before using them for hard boiling. Actually, to be honest with you, I'd much prefer to use farm fresh eggs to eat for breakfast (over easy, scrambled, etc.) and get eggs from the grocery for pickling (or other recipes, like cake). Once the eggs are pickled, you really wouldn't taste the freshness of farm eggs anyway.

I find the white eggs are always easier to peel for whatever reason. I have heard that adding a tablespoon or two of vinager helps too, but I'd try the salt advice first. Happy Pickling!

Place eggs in pot. Cover with water. Turn burner on high. After water begins to boil, count 10 minutes. Remove from heat and rinse in cold water for about 5 minutes (note: run cold water on the eggs in the pot). Try peeling one or two. If successful, continue. If not, refrigerate for 2 hours and continue. You should be having much better success.

When you are boiling the water add a splash of vinegar. My grandmother told me this trick, has worked every time since.

roll them on a paper towel with the palm of your hand,it cracks the shells from the eggs,I use this method all the time it works.

Add salt to the water when boiling. I don't know why, but it works!!
