When I cook meat then drain it, what am I draining? It's the stuff that looks red before cooking and brown afterwards. It is blood or what? Is it healthy or not?

Blood and fat. It is not healthy and it sounds gross, but it is not that gross. Make sure it is cooked and this is what people make gravy and sauces from. People dip sandwiches in it. You can do many things with it.

It's broth. Use it for gravy, use it to make a sauce, or add additional broth or water to make soup. When you cook any meat it benefits greatly to the taste to add a cut up carrot, a single stalk of celery and a small onion. This flavors the broth and provides a foundation for whatever is to come. Yes its blood....I wouldn't drink it, but when cooked it just gets absorbed into the meat and cooked. This is why there are vegetarians out there
